First organic chemistry exam: 89. Above the median (71). Below my standard (A). The 89 is a B+ and the B+ is the ghost of Chemistry past, the persistent shadow that Chemistry casts on my transcript. I am making peace with it. Making peace is not the same as accepting — it is the recognition that some subjects will never be my A subjects and the recognition does not diminish the effort. The effort was total. The result was 89. The 89 is a love letter written in molecular structures and reaction mechanisms, and if the admissions committee cannot see the love in it, they are reading wrong.

I am surrounded by people who are better at organic chemistry than I am, and the surrounding is motivating rather than demoralizing, because iron sharpens iron and carbon bonds to carbon and the metaphors are too easy but the truth is real: I study harder when the people around me are excellent.

Mini Mac & Cheese Dogs

Ingredients
- 8 cocktail or mini hot dogs
- 8 mini slider buns or small hot dog rolls
- 1 1/2 cups elbow macaroni
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup whole milk
- 1 1/2 cups shredded sharp cheddar cheese
- 1/4 cup shredded Gruyere or Monterey Jack (optional, for depth)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dry mustard
- Paprika, for garnish
Instructions
- Cook the pasta. Bring a medium pot of salted water to a boil. Add elbow macaroni and cook according to package directions until just al dente, about 7–8 minutes. Drain and set aside.
- Make the cheese sauce. In the same pot over medium heat, melt butter. Whisk in flour and cook for 1 minute until lightly golden. Gradually pour in milk, whisking constantly, and cook until the mixture thickens, about 3–4 minutes.
- Add the cheese. Remove the pot from heat. Stir in shredded cheddar, Gruyere if using, salt, pepper, garlic powder, and dry mustard until fully melted and smooth.
- Combine. Add the drained macaroni to the cheese sauce and stir to coat evenly. Keep warm on the lowest heat setting, stirring occasionally.
- Cook the hot dogs. In a skillet over medium heat, cook the mini hot dogs for 3–4 minutes, turning occasionally, until lightly browned on all sides. Alternatively, grill or microwave according to preference.
- Toast the buns. Lightly toast slider buns cut-side down in the skillet or under a broiler for 1–2 minutes until golden at the edges.
- Assemble. Place one mini hot dog in each toasted bun. Spoon a generous portion of mac and cheese over the top of each dog. Dust lightly with paprika and serve immediately.
