I didn’t have she-crab soup in my bag, but I had this idea I’ve been returning to for gatherings: roast beef finger sandwiches, the kind that sit on a platter and disappear quietly, the kind that say you are welcome here without making a fuss about it. Back home after the tour leg, I made a batch as a quiet thank-you to no one in particular — to the week, to the readers, to the practice of showing up and feeding people, in whatever form that takes.

Roast Beef Finger Sandwiches

Ingredients

  • 12 slices thin white or wheat sandwich bread, crusts removed
  • 8 oz thinly sliced deli roast beef
  • 4 oz cream cheese, softened
  • 2 tablespoons prepared horseradish
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 cup baby arugula or watercress
  • Salt to taste

Instructions

  1. Make the spread. In a small bowl, combine the softened cream cheese, horseradish, Dijon mustard, garlic powder, and black pepper. Stir until smooth and well blended. Taste and adjust salt as needed.
  2. Prepare the bread. Lay all 12 slices of crustless bread flat on a clean work surface. Using a butter knife or small offset spatula, spread a generous layer of the cream cheese mixture evenly across each slice.
  3. Layer the filling. On 6 of the bread slices, layer the sliced roast beef evenly, folding pieces as needed to keep them within the edges. Top the roast beef with a small handful of arugula or watercress.
  4. Assemble the sandwiches. Press the remaining 6 spread-side-down bread slices firmly onto the filled halves to form 6 whole sandwiches.
  5. Slice into fingers. Using a sharp serrated knife, cut each sandwich into 2 rectangular finger sandwiches, yielding 12 pieces total. For clean cuts, press gently and use a single smooth sawing motion.
  6. Serve or chill. Arrange on a platter and serve immediately, or cover tightly with plastic wrap and refrigerate for up to 2 hours before serving.
