Roast Beef Quiche — The Sunday Table That Holds Us Together

The she-crab soup grounds me on Sundays, but when James and Elise finally carved out a Saturday together last month — truly together, phones down, Elise not on call — I wanted something that felt like a meal rather than a ritual, something I could pull from the oven and set in the center of the table while everyone found their seats. This roast beef quiche has become that dish: substantial enough to feel like a celebration, simple enough that I’m not still in the kitchen when the conversation gets good. It’s the recipe I reach for when the week has asked a lot of everyone and the table needs to do the talking.

Roast Beef Quiche

Ingredients

  • 1 9-inch unbaked pie crust
  • 1 cup cooked roast beef, thinly sliced and chopped
  • 1 cup shredded Swiss cheese
  • 1/2 cup yellow onion, finely diced
  • 1/2 cup green bell pepper, finely diced
  • 3 large eggs
  • 1 1/2 cups half-and-half
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven. Heat oven to 375°F. Fit the unbaked pie crust into a 9-inch pie dish, crimping the edges. Set aside.
  2. Sauté the vegetables. Warm olive oil in a skillet over medium heat. Add onion and bell pepper and cook, stirring occasionally, until softened, about 5 minutes. Remove from heat and let cool slightly.
  3. Build the filling. Scatter the chopped roast beef evenly across the bottom of the pie crust. Layer the sautéed vegetables on top, then sprinkle the shredded Swiss cheese over everything.
  4. Make the custard. In a medium bowl, whisk together the eggs, half-and-half, Worcestershire sauce, garlic powder, thyme, salt, and black pepper until smooth and fully combined.
  5. Fill the crust. Pour the egg custard slowly and evenly over the filling in the pie crust. The liquid should come nearly to the rim.
  6. Bake. Place the quiche on the center rack and bake for 38–42 minutes, until the custard is set in the center and the top is lightly golden. A knife inserted near the center should come out clean.
  7. Rest before slicing. Let the quiche rest for 10 minutes before cutting. This allows the custard to firm up so slices hold their shape cleanly.
