I made she-crab soup on Sunday — the anchor, the constant, the practice. The soup was perfect. The perfection was the practice. And the practice continues, one Sunday at a time, one bowl at a time, one life at a time, the woman stirring, the roux thickening, the kitchen warm, the family fed, the love alive.
The she-crab soup is the anchor — but an anchor needs a dock, and some Sundays the dock is something quieter, something that requires less of me and gives back just as much. This baked cod with mushrooms became that dish: warm from the oven, earthy and gentle, the kind of thing I can slide in and walk away from while I collect myself before thirty years of everything catches up with me at the table. It doesn’t ask much, and on the Sundays when I’ve already given everything, that’s exactly right.
Baked Cod with Mushrooms

Ingredients
- 1 1/2 lbs cod fillets (about 4 portions)
- 8 oz cremini or button mushrooms, sliced
- 3 tablespoons unsalted butter, divided
- 2 cloves garlic, minced
- 1/2 medium yellow onion, thinly sliced
- 1/2 cup dry white wine or chicken broth
- 1 tablespoon fresh lemon juice
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
- Salt and black pepper to taste
- 2 tablespoons fresh parsley, chopped, for serving
- Lemon wedges, for serving
Instructions
- Preheat the oven. Heat oven to 400°F. Lightly grease a 9x13-inch baking dish with 1 tablespoon of the butter.
- Sauté the aromatics. In a skillet over medium heat, melt the remaining 2 tablespoons of butter. Add the onion and cook 3–4 minutes until softened. Add the garlic and mushrooms and cook another 4–5 minutes, stirring occasionally, until the mushrooms are tender and any liquid has mostly evaporated.
- Deglaze and season. Pour in the white wine or broth and lemon juice. Stir in the thyme and season with salt and pepper. Let the mixture simmer 2 minutes, then remove from heat.
- Assemble the dish. Pat the cod fillets dry and season both sides with salt and pepper. Lay them in the prepared baking dish in a single layer. Spoon the mushroom mixture evenly over the top, letting the pan juices pool around the fish.
- Bake. Transfer to the oven and bake uncovered for 18–22 minutes, until the cod flakes easily with a fork and is opaque throughout. Baking time will vary slightly depending on the thickness of the fillets.
- Serve. Scatter fresh parsley over the top and serve immediately with lemon wedges alongside rice, crusty bread, or roasted vegetables.
