Josie’s birthday called for something that felt special without a lot of fuss — and with Gayle there and the week finally settling into something gentle, I wanted a little sweetness that matched the moment. Red velvet always feels like a celebration to me, and these white chip cookies carry that same birthday-cake spirit in a form everyone can grab and enjoy around the table. It felt right to mark fifteen with something as bright and warm as she is.

Red Velvet White Chip Cookies

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 tablespoon red food coloring
  • 2 cups white chocolate chips

Instructions

  1. Preheat oven. Heat oven to 375°F. Line baking sheets with parchment paper and set aside.
  2. Mix dry ingredients. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt until evenly combined.
  3. Cream butter and sugars. In a large bowl, beat softened butter with granulated sugar and brown sugar on medium speed until light and fluffy, about 2–3 minutes.
  4. Add eggs and coloring. Beat in eggs one at a time, then mix in vanilla extract and red food coloring until the color is uniform throughout the batter.
  5. Combine wet and dry. Gradually add the flour mixture to the butter mixture, stirring just until no dry streaks remain. Do not overmix.
  6. Fold in chips. Gently stir in white chocolate chips until evenly distributed through the dough.
  7. Portion and bake. Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart. Bake for 10–12 minutes, until the edges are just set and the centers look slightly underdone.
  8. Cool. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
