After we got home from the pumpkin patch on Saturday — Brayden already planning which pumpkin he was going to carve, Eden still wide-eyed from her first-ever trip — I wanted something that kept that warm, happy fall feeling going into the weekend. This Butterscotch Caramel Pumpkin Dip was exactly right: it’s fast, it’s cheap, and when you set it out with apple slices and graham crackers, it feels like fall in a bowl. I tested it Saturday, dialed it in, and made it again Sunday with Shelly and the kids — it didn’t last long.
Butterscotch Caramel Pumpkin Dip

Ingredients
- 1 (8 oz) block cream cheese, softened
- 1 (15 oz) can pure pumpkin puree
- 1 (3.4 oz) box butterscotch instant pudding mix, dry
- 1/2 cup caramel sauce, plus more for drizzling
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- 1/4 teaspoon vanilla extract
- 1 (8 oz) tub frozen whipped topping (such as Cool Whip), thawed
- Apple slices, graham crackers, and gingersnap cookies for serving
Instructions
- Beat the cream cheese. In a large bowl, beat the softened cream cheese with a hand mixer on medium speed until smooth and fluffy, about 1–2 minutes. Scrape down the sides of the bowl.
- Add the pumpkin and seasonings. Add the pumpkin puree, dry butterscotch pudding mix, caramel sauce, pumpkin pie spice, cinnamon, and vanilla extract. Beat on medium speed until fully combined and smooth, about 2 minutes.
- Fold in the whipped topping. Using a rubber spatula, gently fold in the thawed whipped topping until no streaks remain. Do not overmix — you want to keep it light and fluffy.
- Chill. Transfer the dip to a serving bowl, cover with plastic wrap, and refrigerate for at least 30 minutes to allow the flavors to meld and the dip to firm up slightly.
- Serve. Remove from the refrigerator and drizzle additional caramel sauce over the top. Serve alongside apple slices, graham crackers, and gingersnap cookies for dipping.
