This pineapple loaf is exactly that: nothing flashy, nothing rushed, just a tender, fragrant loaf that rewards the kind of steady attention Sofia was describing in those numbers. Pineapple Loaf

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 can (8 oz) crushed pineapple, undrained
  • 1/4 cup sour cream

Instructions

  1. Preheat. Heat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line the bottom with parchment paper.
  2. Mix dry ingredients. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. Cream butter and sugar. In a large bowl, beat the softened butter and granulated sugar together with a hand mixer or stand mixer on medium speed until light and fluffy, about 3 minutes.
  4. Add eggs and vanilla. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Incorporate wet ingredients. Add the crushed pineapple (with its juice) and the sour cream to the butter mixture, stirring gently to combine.
  6. Combine. Fold the dry ingredients into the wet ingredients in two additions, stirring just until no dry streaks remain. Do not overmix.
  7. Bake. Pour the batter into the prepared loaf pan and smooth the top. Bake for 50—55 minutes, or until a toothpick inserted in the center comes out clean and the top is deep golden.
  8. Cool. Let the loaf cool in the pan for 10 minutes before turning out onto a wire rack. Slice when fully cool for clean, tender slices.
