Homemade Grape Nuts

Ingredients
- 2 cups whole wheat flour
- 1 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/4 cup molasses
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
Instructions
- Preheat. Heat your oven to 350°F. Line two large baking sheets with parchment paper and set aside.
- Mix dry ingredients. In a large bowl, whisk together the whole wheat flour, all-purpose flour, brown sugar, baking soda, and salt until evenly combined.
- Combine wet ingredients. In a separate bowl or measuring cup, stir together the buttermilk, molasses, melted butter, and vanilla extract.
- Form the dough. Pour the wet ingredients into the dry ingredients and stir until a soft, slightly sticky dough comes together. It will be dense — that’s exactly right.
- First bake. Divide the dough between the two prepared baking sheets and press each portion into a flat, even layer about 1/4 inch thick. Bake for 20–25 minutes, until firm and lightly browned at the edges.
