  • 2 tablespoons freshly grated grapefruit zest (from about 1 large grapefruit)
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup neutral oil (such as vegetable or light olive oil)
  • For the glaze: 1/3 cup freshly squeezed grapefruit juice + 1/3 cup powdered sugar, whisked together

Instructions

  1. Prepare the pan. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line with parchment paper, leaving an overhang on the long sides.
  2. Whisk dry ingredients. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Mix the wet ingredients. In a large bowl, whisk together the yogurt, sugar, eggs, grapefruit zest, and vanilla until smooth and well combined.
  4. Combine. Add the dry ingredients to the wet ingredients and stir gently until just incorporated — do not overmix. Fold in the oil until the batter is glossy and smooth.
  5. Bake. Pour the batter into the prepared pan and smooth the top. Bake for 48 to 52 minutes, until a toothpick inserted in the center comes out clean and the top is golden.
  6. Glaze. While the cake is still warm, pour the grapefruit glaze slowly over the top, letting it soak in. Allow the cake to cool in the pan for 15 minutes, then lift out using the parchment overhang and cool completely on a wire rack.
