Dark Chocolate Brownies

Ingredients
- 1/2 cup (1 stick) unsalted butter, cut into pieces
- 4 oz dark chocolate (70% cacao or higher), chopped
- 1 cup granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1/4 cup unsweetened dark cocoa powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 1/2 cup dark chocolate chips (optional)
Instructions
- Preheat and prep. Preheat oven to 350°F. Grease an 8x8-inch baking pan and line with parchment paper, leaving an overhang on two sides for easy removal.
- Melt butter and chocolate. In a medium saucepan over low heat, melt the butter and chopped dark chocolate together, stirring frequently until smooth. Remove from heat and let cool for 5 minutes.
- Add sugar and eggs. Stir the sugar into the chocolate mixture until combined. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
- Add dry ingredients. Sift the flour, cocoa powder, salt, and baking powder directly into the saucepan. Fold gently with a spatula until just combined — do not overmix. Fold in chocolate chips if using.
- Bake. Pour the batter into the prepared pan and spread evenly. Bake for 28—32 minutes, until the top is set and a toothpick inserted in the center comes out with moist crumbs (not wet batter).
- Cool and cut. Allow brownies to cool completely in the pan on a wire rack before lifting out using the parchment overhang. Cut into 16 squares.
