- 1 1/2 lbs Italian sausage links (sweet, hot, or a mix)
- 3 bell peppers (red, yellow, and green), sliced into strips
- 1 large yellow onion, sliced
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 can (14.5 oz) diced tomatoes, drained
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- Fresh parsley or basil for garnish (optional)
Instructions
- Brown the sausage. Heat 1 tablespoon of olive oil in a large skillet or cast-iron pan over medium-high heat. Add the sausage links and cook, turning occasionally, until browned on all sides, about 8–10 minutes. They don’t need to be fully cooked through yet. Remove to a cutting board and slice into 1-inch rounds.
- Soften the vegetables. In the same pan, add the remaining tablespoon of olive oil. Add the sliced onions and peppers and cook over medium heat, stirring occasionally, until softened and beginning to caramelize, about 10 minutes. Season lightly with salt and pepper as they cook.
- Add the garlic. Push the vegetables to the edges of the pan and add the minced garlic to the center. Cook for 1 minute, stirring constantly, until fragrant. Mix the garlic into the vegetables.
- Combine and simmer. Return the sliced sausage to the pan. Add the drained diced tomatoes, Italian seasoning, and red pepper flakes if using. Stir everything together and reduce the heat to medium-low. Simmer uncovered for 10–12 minutes, until the sausage is cooked through and the sauce has thickened slightly.
- Taste and finish. Adjust seasoning with salt and pepper. Serve as-is, over rice, in hoagie rolls, or alongside crusty bread. Garnish with fresh parsley or basil if you have it.
