Brie Cherry Pastry Cups — A Little Something Special for Amber’s Easter Table

Easter is April 5 this year. Planning underway. Amber hosting at her apartment — she will have just finished her undergraduate coursework. She wants to celebrate.

Sunday: pot roast.

With Easter on the horizon and Amber’s big milestone making it feel like a real celebration this year, I wanted to bring something that felt festive and a little special alongside the pot roast — something that would make her apartment feel like a proper party from the very first bite. These Brie Cherry Pastry Cups are exactly that: effortless to put together, beautiful on a table, and just fancy enough to honor everything she’s worked so hard for.

Brie Cherry Pastry Cups

Prep Time: 15 minutes | Cook Time: 15 minutes | Total Time: 30 minutes | Servings: 24 cups

Ingredients

  • 1 package (17.3 oz) frozen puff pastry sheets, thawed
  • 6 oz Brie cheese, rind removed, cut into 24 small cubes
  • 1/2 cup cherry preserves
  • 1/4 cup dried tart cherries, roughly chopped
  • 1 egg, beaten
  • 1 tablespoon fresh thyme leaves, for garnish
  • Flaky sea salt, to taste

Instructions

  1. Preheat & prep. Preheat oven to 400°F (200°C). Lightly grease a 24-cup mini muffin tin or line with paper liners.
  2. Cut the pastry. Unfold both puff pastry sheets on a lightly floured surface. Cut each sheet into 12 equal squares (24 squares total).
  3. Form the cups. Gently press each square into a mini muffin cup, allowing the corners to fold up and over the edges to create a rustic cup shape.
  4. Brush with egg wash. Lightly brush the pastry edges with beaten egg to encourage a golden, glossy finish.
  5. Fill. Place one cube of Brie into the center of each pastry cup. Top with about 1 teaspoon of cherry preserves and a pinch of chopped dried cherries.
  6. Bake. Bake for 13–15 minutes, until the pastry is puffed and golden brown and the Brie is melted and bubbling.
  7. Finish & serve. Remove from the oven and let cool in the pan for 5 minutes. Scatter fresh thyme leaves over the tops and finish with a light pinch of flaky sea salt. Serve warm or at room temperature.
