Yummy Cracker Snacks -- The Simple Bites That Keep a Busy Bakery Week Going

A quiet week of bread and family. The subscription deliveries went out on Saturday. The farmers' market sold out by 10 AM. The Anapra bakery reported its best week of the month. The numbers are steady. The steady is the success. The success is the bread.

After a week like this one — subscription boxes packed and shipped, the market table cleared out before the morning was half done — I’m not reaching for anything complicated when it comes time to feed myself and whoever wanders through the kitchen. The Anapra crew and I have learned that the steadiest weeks deserve the simplest pleasures, and these Yummy Cracker Snacks have become our go-to between batches and after the last loaf cools. They come together in minutes and taste like you put in more effort than you did, which feels exactly right when the effort is already all going into the bread.

Yummy Cracker Snacks

Prep Time: 10 min | Cook Time: 15 min | Total Time: 25 min | Servings: 12

Ingredients

  • 1 sleeve (about 35–40) buttery round crackers (such as Ritz)
  • 1/2 lb thinly sliced deli ham or turkey
  • 8 oz cream cheese, softened
  • 1/4 cup finely shredded sharp cheddar cheese
  • 2 tablespoons sour cream
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh chives or green onion, finely chopped
  • Optional: sliced olives or small pickles for topping

Instructions

  1. Mix the spread. In a medium bowl, combine the softened cream cheese, sour cream, cheddar cheese, garlic powder, onion powder, and black pepper. Stir until smooth and well blended.
  2. Fold in chives. Add the chopped chives or green onion to the cream cheese mixture and stir to combine. Taste and adjust seasoning if needed.
  3. Prepare the crackers. Lay the crackers out in a single layer on a large serving platter or baking sheet.
  4. Layer the meat. Fold or layer a small piece of deli ham or turkey onto each cracker.
  5. Top with spread. Using a small spoon or piping bag, dollop or pipe about 1 teaspoon of the cream cheese mixture onto each cracker over the meat.
  6. Garnish and serve. Top each cracker with a slice of olive, a small pickle round, or an extra pinch of chives if desired. Serve immediately or refrigerate uncovered for up to 30 minutes before serving.
