- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 large eggs
- 1 cup buttermilk
- 1 cup strong brewed coffee, cooled
- 1/2 cup vegetable oil
- 2 teaspoons pure vanilla extract
- For the chocolate frosting:
- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup unsweetened cocoa powder
- 3 cups powdered sugar, sifted
- 1/3 cup heavy cream
- 1 teaspoon pure vanilla extract
- Pinch of salt
Instructions
- Preheat and prepare. Preheat your oven to 350°F. Grease two 9-inch round cake pans, line the bottoms with parchment paper, and grease the parchment. Set aside.
- Mix the dry ingredients. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt until evenly combined.
- Mix the wet ingredients. In a separate medium bowl, whisk together the eggs, buttermilk, cooled coffee, vegetable oil, and vanilla extract until smooth.
- Combine and pour. Pour the wet ingredients into the dry ingredients and whisk until the batter is smooth and no dry streaks remain — it will be thin. Divide the batter evenly between the two prepared pans.
- Bake. Bake for 33–35 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then turn out onto a wire rack and cool completely before frosting.
- Make the frosting. Beat the softened butter on medium speed until fluffy, about 2 minutes. Add the cocoa powder and mix on low until incorporated. Gradually add the powdered sugar, alternating with the heavy cream, beating on medium until smooth and spreadable. Mix in the vanilla and salt.
- Frost and serve. Place one cake layer on your serving plate and spread a generous layer of frosting across the top. Set the second layer on top and frost the top and sides of the entire cake. Slice and serve at room temperature.
