White Lasagna Chicken Rollups

Ingredients
- 12 lasagna noodles, cooked al dente and drained
- 2 cups cooked chicken breast, shredded or finely chopped
- 1 cup whole-milk ricotta cheese
- 1 1/2 cups shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese, divided
- 1 large egg
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried Italian seasoning
- Salt and black pepper, to taste
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 2 1/2 cups whole milk, warmed
- 1/2 cup chicken broth
- 1/4 teaspoon ground nutmeg
- Fresh parsley, chopped, for garnish
Instructions
- Preheat and prep. Preheat your oven to 375°F. Lightly grease a 9x13-inch baking dish and set aside.
- Make the filling. In a large bowl, combine the shredded chicken, ricotta, 1 cup of mozzarella, 1/4 cup of Parmesan, the egg, garlic powder, onion powder, Italian seasoning, salt, and pepper. Stir until evenly mixed.
- Make the white sauce. In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1–2 minutes until lightly golden. Gradually pour in the warmed milk and chicken broth, whisking constantly. Add the nutmeg and cook, stirring, until the sauce thickens, about 5–7 minutes. Season with salt and pepper. Remove from heat.
- Assemble the rollups. Lay each cooked lasagna noodle flat on a clean surface. Spread about 3 tablespoons of the chicken filling in an even layer across each noodle, then roll it up snugly from one end to the other.
- Layer the dish. Spread about 3/4 cup of the white sauce across the bottom of the prepared baking dish. Arrange the rollups seam-side down in a single layer over the sauce.
- Top and bake. Pour the remaining white sauce evenly over the rollups. Sprinkle the remaining 1/2 cup mozzarella and 1/4 cup Parmesan across the top. Cover tightly with foil and bake for 25 minutes.
- Brown the top. Remove the foil and bake uncovered for an additional 8–10 minutes, until the cheese is bubbling and lightly golden.
- Rest and garnish. Let the rollups rest for 5 minutes before serving. Garnish with fresh chopped parsley.
