Vegetarian Burrito Bowl Salad — The Recipe That Fills the Gap Between Ingredient and Confidence

January has its own particular flavor of discipline. After the abundance of December, the kitchen shifts — less decoration, fewer sweets, more substance. I find myself reaching for whole grains and dried legumes, big pots that stretch across three days of lunches, food that does quiet work without fanfare.

I filmed a video this week about whole grain cooking: farro, barley, freekeh, how to cook each one and what to do with them after. It took four hours to film because I was actually cooking each grain while explaining it and the timing was real. He said what changed. I said I decided the thing I was offering was more important than my worry about how it looked. He thought about that for a while. Then he said, "That's pretty good, Mom." High praise.

Vegetarian Burrito Bowl Salad

Ingredients

  • 1 cup long-grain white or brown rice, uncooked
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn, thawed, or 1 ear fresh corn, kernels cut off
  • 1 red bell pepper, diced
  • 1/2 red onion, finely diced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 2 cups romaine or mixed greens, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced (about 2 tablespoons)
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • Sour cream or Greek yogurt, for serving (optional)
  • Salsa or pico de gallo, for serving (optional)

Instructions

  1. Cook the rice. Cook rice according to package directions. Fluff with a fork and season lightly with salt. Let cool for 5 minutes before assembling.
  2. Season the beans. In a small bowl, toss drained black beans with 1/2 teaspoon cumin, a pinch of chili powder, and a squeeze of lime juice. Set aside.
  3. Make the dressing. Whisk together olive oil, remaining lime juice, remaining cumin, chili powder, garlic powder, salt, and pepper until combined.
  4. Prep the vegetables. Dice the bell pepper and red onion, halve the cherry tomatoes, and dice the avocado. Keep avocado separate until serving to prevent browning.
  5. Assemble the bowls. Divide the chopped romaine among four bowls. Top each with a generous scoop of warm rice, seasoned black beans, corn, bell pepper, red onion, and cherry tomatoes.
  6. Dress and finish. Drizzle the lime dressing over each bowl. Add diced avocado and a scatter of fresh cilantro. Serve with sour cream and salsa on the side if desired.
