Vegetable Beef Shepherd’s Pie

Ingredients
- 1 1/2 lbs ground venison (or ground beef)
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, peeled and diced
- 1 cup frozen green peas
- 1 cup frozen corn kernels
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 cup beef broth
- 1 tablespoon all-purpose flour
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 2 1/2 lbs russet potatoes, peeled and cubed
- 4 tablespoons unsalted butter
- 1/2 cup whole milk or cream
- 1/2 cup shredded sharp cheddar cheese
Instructions
- Boil the potatoes. Place peeled, cubed potatoes in a large pot of salted water. Bring to a boil and cook 15–18 minutes until fork-tender. Drain and return to the pot.
- Mash and season. Add butter and milk to the drained potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Set aside.
- Brown the meat. Preheat oven to 400°F. In a large oven-safe skillet or Dutch oven, heat olive oil over medium-high heat. Add ground venison and cook, breaking it apart, until browned, about 6–8 minutes. Drain excess fat if needed.
- Build the filling. Add onion and carrots to the skillet and cook 4–5 minutes until softened. Stir in garlic, tomato paste, Worcestershire sauce, thyme, and smoked paprika. Cook 1 minute. Sprinkle flour over the mixture and stir to combine.
- Add broth and vegetables. Pour in beef broth and stir to incorporate. Add peas and corn. Simmer over medium heat 5–6 minutes until the mixture thickens slightly. Season with salt and pepper.
- Top and bake. Spread the mashed potatoes evenly over the meat filling, covering it completely. Sprinkle shredded cheddar over the top. Bake uncovered at 400°F for 20–25 minutes until the top is golden and the edges are bubbling.
- Rest and serve. Let the shepherd’s pie rest 5 minutes before serving. Scoop into deep bowls and serve hot.
