Last week of June and the summer has settled into its full rhythm: early morning drives to work before the heat sets in, long afternoons with the kids in the shade of the big oak in the play yard, evenings spent cooking with all the windows open until it gets too hot and then I give up and turn the AC back on. Biscuit has given up on the windowsill and taken to lying directly on the bathroom tile, which is the coldest floor in the apartment. I do not blame him at all.
I made cucumber gazpacho this week, which is something I have never done before and will definitely do again. Blended cucumber, Greek yogurt, a little mint, garlic, lemon, olive oil, salt. Cold, bright, almost shockingly refreshing in the July heat. I served it in small cups as a sort of snack/first course situation and ate the rest with a piece of good bread for lunch three days running. It is not a thing Gloria would have introduced me to, it is not Southern in any way, but learning to expand what I cook feels important. My food heritage started with her kitchen but it does not have to stay only there.
I have been thinking about that more lately. The foundation Gloria gave me is real and I am grateful for it. But I am twenty-two and I have my own palate and my own curiosity and there are whole cuisines I have barely touched. I ordered a cookbook on Middle Eastern food this week. I also ordered a South Indian one. I figure the only way to learn is to start somewhere.
After spending a week discovering how much I love cold blended things—that cucumber gazpacho genuinely changed something in how I think about summer cooking—I found myself reaching for the blender again by the weekend. The Tropical Green Smoothie felt like a natural companion to that same spirit: bright, cold, a little surprising, and nothing I would have thought to make a year ago. It fits right alongside the expanding I’ve been doing, and on a day when the apartment hit 84 degrees before noon, it was exactly the right call.
Tropical Green Smoothie

Ingredients
- 1 cup fresh baby spinach, loosely packed
- 1 cup frozen mango chunks
- 1/2 cup frozen pineapple chunks
- 1 ripe banana, peeled and sliced
- 3/4 cup coconut milk (or almond milk)
- 1/2 cup plain Greek yogurt
- 1 tablespoon honey or agave, optional
- 1/2 cup ice cubes
Instructions
- Layer the blender. Add the spinach and coconut milk to the blender first—putting the liquid in first helps the blades catch the greens cleanly.
- Add the fruit. Layer in the frozen mango, pineapple, banana, and Greek yogurt on top of the greens.
- Blend until smooth. Blend on high for 45–60 seconds until completely smooth and no green streaks remain. Add ice and blend for another 15 seconds to chill and thicken.
- Taste and adjust. If you’d like it sweeter, add honey or agave and pulse once more to combine.
- Serve immediately. Pour into two glasses and drink right away for the best texture and color.
