These are the cookies I baked that week — Mama’s recipe, the one I’ve carried in my head since I was small enough to stand on a step stool and watch her work the dough. If a week of good living calls for anything, it calls for something thick and chewy and honest, something that asks nothing of you except that you sit down and eat it slow. This is that cookie.
Thick And Chewy Oatmeal Raisin Cookies

Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup packed dark brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 1/2 teaspoons pure vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 3 cups old-fashioned rolled oats
- 1 1/2 cups raisins
Instructions
- Preheat. Heat your oven to 350°F. Line two baking sheets with parchment paper and set aside.
- Cream butter and sugars. In a large bowl, beat the softened butter, dark brown sugar, and granulated sugar together until light and fluffy, about 3 to 4 minutes. Don’t rush this step — it’s what gives the cookies their thick, tender crumb.
- Add eggs and vanilla. Beat in the eggs one at a time, then add the vanilla extract and mix until fully combined.
- Mix dry ingredients. In a separate bowl, whisk together the flour, baking soda, cinnamon, salt, and nutmeg.
- Combine. Gradually add the dry ingredients to the butter mixture, stirring until just incorporated. Do not overmix.
- Fold in oats and raisins. Stir in the rolled oats and raisins by hand until evenly distributed throughout the dough.
- Scoop and bake. Drop heaping 2-tablespoon portions of dough onto the prepared baking sheets, spacing them about 2 inches apart. Slightly flatten each ball with the palm of your hand. Bake for 11 to 13 minutes, until the edges are set and golden but the centers still look just slightly underdone.
- Cool. Let the cookies rest on the baking sheet for 5 minutes before transferring to a wire rack. They firm up as they cool and that’s when the chew really sets in.
