Real estate waits for no one. I showed 7 houses this week in neighborhoods where the asking prices climb like the temperature. Every showing is a conversation about what home means. Every key I hand over is a story beginning.
Dimitri stopped by the bakery Saturday morning to eat spanakopita and tell Mama she is doing things wrong. She told him he had his chance. They argued. They ate. They loved. In that order, which is the only order this family knows.
I am 47 years old and I have learned that life is not a straight line from A to B. It is a moussaka — layers of different things, some planned, some accidental, all held together by heat and time and the stubborn refusal to fall apart.
I made pastitsio because January needed warmth and cinnamon and a bechamel that took forty-five minutes and three seconds to eat. I ate it on the back porch while the sun set and the air smelled like rosemary and the evening air. A quiet evening. The food was good. Good is enough. Good is everything.
I visited the bakery this weekend. Mama was behind the counter, flour on her apron, her face set in the concentration of a woman who takes baking as seriously as other people take surgery. I stood next to her and rolled dough and said nothing because the silence between us is not empty — it is full of every recipe she taught me and every critique she gave me and every morning she woke at 4 AM to make phyllo that nobody else can make.
Pastitsio has always been my reset button — the dish I make when the week has piled on and I need something that holds its shape no matter what. But when I looked at what I had and thought about those layers I keep returning to — the ones that show up in food and family and the messy, stubborn middle of life — I landed on this Texas-Style Lasagna. It carries the same spirit: ground meat, bold seasoning, a creamy layer that binds everything together, and a long stay in a hot oven that turns separate things into one whole. Dimitri would argue about the spices. Mama would eat two servings and say nothing, which is the highest praise she gives.
Texas-Style Lasagna
Prep Time: 25 min | Cook Time: 55 min | Total Time: 1 hr 20 min | Servings: 8
Ingredients
- 1 1/2 lbs ground beef
- 1 packet (1 oz) taco seasoning mix
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 can (15 oz) tomato sauce
- 1 can (4 oz) diced green chiles
- 12 lasagna noodles, cooked and drained
- 2 cups cottage cheese
- 2 large eggs, lightly beaten
- 4 cups shredded Monterey Jack cheese, divided
- 1 cup sour cream
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper to taste
- Fresh cilantro or sliced green onions for garnish (optional)
Instructions
- Preheat and prepare. Preheat your oven to 350°F. Lightly grease a 9x13-inch baking dish and set aside.
- Brown the beef. In a large skillet over medium-high heat, cook the ground beef until no longer pink, breaking it apart as it cooks, about 7–8 minutes. Drain excess fat.
- Build the meat sauce. Stir the taco seasoning, diced tomatoes, tomato sauce, and green chiles into the browned beef. Reduce heat to medium-low and simmer for 10 minutes, stirring occasionally, until the sauce thickens slightly. Season with salt and pepper.
- Mix the cheese layer. In a medium bowl, combine the cottage cheese, beaten eggs, sour cream, garlic powder, and onion powder. Stir until smooth and well blended.
- Layer the lasagna. Spread a thin layer of the meat sauce on the bottom of the prepared baking dish. Lay 4 lasagna noodles over the sauce. Spread half the cottage cheese mixture over the noodles, then top with one-third of the shredded Monterey Jack. Add another layer of meat sauce. Repeat with 4 more noodles, the remaining cottage cheese mixture, another third of the cheese, and more meat sauce.
- Finish and top. Place the final 4 noodles on top, spread the remaining meat sauce evenly over them, and finish with the last third of the shredded Monterey Jack cheese.
- Bake covered. Cover the dish tightly with aluminum foil and bake for 35 minutes.
- Bake uncovered. Remove the foil and bake for an additional 15–20 minutes, until the cheese is melted, bubbly, and lightly golden at the edges.
- Rest before serving. Let the lasagna rest for 10 minutes before cutting. This allows the layers to set so each slice holds together cleanly. Garnish with cilantro or green onions if desired.
