Sweet and Spicy Air-Fryer Meatballs — The Meat Candy That Started It All

Memorial Day weekend. The unofficial start of Wisconsin summer, when every person in the state simultaneously uncovers their grill and pretends winter never happened. Dad hosted at the Cape Cod. The usual drill: brats, burgers, potato salad, cold beer. But this year I brought something extra: smoked pork belly burnt ends. Same as last year: flowers, a small flag. I sat and told him about the column, the Instagram, the brewery, the IPA. Danny would have loved the IPA. He was the kind of guy who would have pretended to understand craft beer while secretly preferring Miller Lite, but he would have been excited for me. He would have been the first person to share my column and the last person to admit he was proud. "I'm doing things, Danny," I told the headstone. "I'm doing things I didn't know I was going to do." The flag fluttered. The grass was green. Summer was here. The June column shipped on Friday. The smoking piece. But that sticky, sweet-heat combination — the thing that made Dad stop mid-chew and eat seven more — is something I keep chasing in my everyday cooking. These sweet and spicy air-fryer meatballs scratch exactly that itch: a caramelized glaze with brown sugar heat, done in under 30 minutes, no smoker required. They’re not burnt ends, but they carry the same dangerous energy Mom warned me about.

Sweet and Spicy Air-Fryer Meatballs

Ingredients

  • 1 1/2 lbs ground pork (or 80/20 ground beef)
  • 1/3 cup panko breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • Glaze:
  • 1/3 cup packed brown sugar
  • 3 tbsp soy sauce
  • 2 tbsp sriracha (or more to taste)
  • 1 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika

Instructions

  1. Mix the meatballs. In a large bowl, combine ground pork, panko, egg, garlic, smoked paprika, cayenne, salt, and pepper. Mix until just combined — don’t overwork it or the meatballs will be tough.
  2. Form. Roll mixture into 1 1/2-inch balls (about 24 total) and place on a plate. Refrigerate for 5 minutes while you preheat the air fryer.
  3. Air fry. Preheat air fryer to 400°F. Arrange meatballs in a single layer, working in batches if needed. Cook 10–12 minutes, shaking the basket halfway through, until cooked through and browned on the outside.
  4. Make the glaze. While meatballs cook, whisk together brown sugar, soy sauce, sriracha, apple cider vinegar, garlic powder, and smoked paprika in a small saucepan over medium heat. Simmer 3–4 minutes until slightly thickened and glossy.
  5. Glaze and caramelize. Transfer cooked meatballs to a bowl, pour glaze over them, and toss to coat well. Return glazed meatballs to the air fryer and cook 3–4 more minutes at 400°F until the glaze caramelizes and gets sticky. Watch closely — the sugar burns fast.
  6. Serve. Transfer to a serving platter. Garnish with sliced green onions and sesame seeds if desired. Serve immediately — they go fast.
