Sweet and Golden Easter Bread — When Science Leads You Back to Something Simple and Beautiful

Mason and I started a sourdough project. Not just baking bread — a real project, with variables and controls and data. He wants to test how hydration levels affect crumb structure. We made three loaves: 65% hydration, 72% hydration, and 80% hydration. Same flour. Same starter (Frank). Same oven temperature. Same everything except the water. The results were visible even before we sliced: the 65% was dense and tight, the 72% was open and airy, the 80% was almost too wet, with holes you could see through. Mason photographed the crumbs. He made a graph. He wrote a conclusion: "Higher hydration produces a more open crumb but is harder to shape. 72% is the optimal balance." He is nine and he has just determined the optimal hydration for sourdough. I called Brett and said, "Your nephew just did bread science," and Brett said, "Of course he did," because nothing Mason does surprises anyone anymore.

This is the pandemic's gift — time. Time to do the experiments that normal life doesn't allow. Time to stand in a kitchen with your son and measure water to the gram and wait for bread to rise and talk about nothing important while the timer counts down. The pandemic is terrible. But the time is a gift, and I'm taking it, all of it, every minute of sourdough science and telescope nights and garden mornings, because this time will not come again. The children will be this age once. The bread will be this experimental once. And I will be here, in this kitchen, with this boy, and this is enough.

Lily's riding continues: she's now working on lead changes, which is an advanced skill for a six-year-old and which Lily approaches with the focus of someone training for the Olympics, which she has mentioned as a goal, and which I have not discouraged because there are worse goals than the Olympics and Lily's confidence deserves to aim at the highest thing it can imagine.

I made the 72% hydration loaf again — Mason's recommended recipe. It was perfect. Open crumb, crispy crust, the tang of a three-year-old starter. We sliced it warm and ate it with butter and I said, "This is the best bread we've ever made," and Mason said, "We proved it with science," and he was right. Science and bread. The two things that make sense in a world that doesn't.

After Mason declared 72% hydration the scientifically optimal sourdough formula, I found myself wanting to celebrate all those patient hours at the counter with something a little more festive — something golden and soft and unapologetically joyful, a counterpoint to the serious crumb analysis. This Sweet and Golden Easter Bread became our victory lap: still bread, still made by hand, still requiring the kind of unhurried attention that the pandemic unexpectedly gave us, but this time dressed up a little, like a loaf that knows it earned its place on the table. Mason approved the shape. Frank the starter did not contribute, and that was fine — even a scientist needs a holiday.

Sweet and Golden Easter Bread

Ingredients

  • 2 1/4 tsp active dry yeast (1 standard packet)
  • 1/4 cup warm water (110°F)
  • 1 cup whole milk, warmed
  • 1/3 cup granulated sugar, plus a pinch for the yeast
  • 1/3 cup unsalted butter, softened
  • 1 tsp salt
  • 3 large eggs, room temperature
  • 4 1/2 cups all-purpose flour, plus more for kneading
  • 1 tsp pure vanilla extract
  • Zest of 1 lemon
  • 1 egg beaten with 1 tbsp water, for egg wash
  • Pearl sugar or coarse sugar, for topping (optional)

Instructions

  1. Activate the yeast. In a small bowl, combine warm water and a pinch of sugar. Sprinkle yeast over the top and let sit 5–10 minutes until foamy and fragrant. If it doesn’t foam, your water may be too hot or the yeast may be expired — start over before continuing.
  2. Mix the dough base. In the bowl of a stand mixer (or a large mixing bowl), whisk together the warm milk, sugar, softened butter, salt, vanilla extract, lemon zest, and 3 eggs until combined. Pour in the activated yeast mixture and stir to incorporate.
  3. Add the flour. With the dough hook attached, add flour one cup at a time, mixing on low speed between additions. Continue until a soft, slightly sticky dough forms and pulls away from the sides of the bowl, about 3–4 minutes. If mixing by hand, stir with a wooden spoon until the dough comes together, then turn onto a floured surface.
  4. Knead until smooth. Knead the dough on medium speed for 6–8 minutes (or 8–10 minutes by hand) until it is smooth, elastic, and springs back when poked. It should feel soft like an earlobe and only slightly tacky — not sticky. Add flour one tablespoon at a time only if needed.
  5. First rise. Shape the dough into a ball and place in a lightly greased bowl, turning to coat. Cover with plastic wrap or a clean kitchen towel and let rise in a warm, draft-free spot until doubled in size, about 1 to 1 1/2 hours.
  6. Shape the loaf. Punch down the dough and turn it onto a lightly floured surface. Divide into 3 equal pieces and roll each into a 16-inch rope. Pinch the three ropes together at the top and braid them loosely but evenly, tucking the ends under. Transfer the braid to a parchment-lined baking sheet.
  7. Second rise. Cover loosely with a towel or greased plastic wrap and let rise until puffy and nearly doubled, about 45 minutes to 1 hour. Meanwhile, preheat your oven to 375°F.
  8. Apply egg wash and bake. Gently brush the entire surface of the loaf with the egg wash, being careful not to deflate the braid. Sprinkle with pearl sugar if using. Bake for 25–30 minutes until deep golden brown and the internal temperature reads 190°F on an instant-read thermometer. If the top browns too quickly, tent loosely with foil for the final 10 minutes.
  9. Cool before slicing. Transfer to a wire rack and let cool at least 20 minutes before slicing. The bread will slice cleanly and the crumb will set as it cools — worth every minute of waiting.
