I made she-crab soup on Sunday — the anchor, the constant, the practice. The soup was perfect. The perfection was the practice. And the practice continues, one Sunday at a time, one bowl at a time, one life at a time, the woman stirring, the roux thickening, the kitchen warm, the family fed, the love alive.
She-crab soup is my Sunday ritual, but not every Sunday looks the same — some weeks the kitchen asks for something different, something layered and slow and baked golden in the oven while the house wakes up around it. This Stuffing & Sausage Strata is that recipe for me: the kind of dish that holds the morning together the way a good roux holds a soup, the way a phone call from Athens holds a birthday, the way practice holds a life. I make it when I need the warmth to start early and stay long, and when I want the people I love to sit down to something that took time — because the time is the love, and the love is the point.
Stuffing & Sausage Strata

Ingredients
- 1 lb bulk pork breakfast sausage
- 1 medium yellow onion, diced
- 2 celery stalks, finely chopped
- 3 cups prepared herb stuffing cubes (such as Pepperidge Farm)
- 2 cups shredded sharp cheddar cheese, divided
- 6 large eggs
- 2 1/2 cups whole milk
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon kosher salt
- 2 tablespoons unsalted butter, for greasing
- Fresh flat-leaf parsley, chopped, for garnish
Instructions
- Brown the sausage. In a large skillet over medium-high heat, cook the sausage, breaking it into crumbles, until no pink remains, about 7–8 minutes. Add the diced onion and celery and cook until softened, about 4 minutes more. Drain excess fat and set aside to cool slightly.
- Layer the strata. Butter a 9×13-inch baking dish generously. Spread the stuffing cubes in an even layer across the bottom. Scatter the sausage mixture evenly over the stuffing, then top with 1 1/2 cups of the shredded cheddar.
- Make the custard. In a large bowl, whisk together the eggs, milk, Dijon mustard, garlic powder, thyme, salt, and pepper until fully combined and smooth.
- Assemble and rest. Pour the egg custard evenly over the layered casserole, pressing down gently with a spatula so the stuffing absorbs the liquid. Cover tightly with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
- Bake. Remove the strata from the refrigerator 30 minutes before baking. Preheat the oven to 350°F. Remove the plastic wrap, scatter the remaining 1/2 cup of cheddar over the top, and bake uncovered for 50–55 minutes, until the custard is fully set in the center and the top is deep golden brown.
- Rest and serve. Let the strata rest for 10 minutes before slicing. Garnish with fresh parsley and serve warm directly from the baking dish.
