Spicy Chicken Pumpkin Pizza — When the Season Itself Is a Seasoning

October 2021. Fall in Memphis, and I am 62, walking the neighborhood in my light jacket, watching the leaves turn on the oaks and maples that line Deadrick Avenue. The smoker is happy in fall — the cooler air holds the smoke lower, keeps it closer to the meat, and the results are always a shade better in October than in July, as if the season itself is a seasoning.

Rosetta beside me through the week, steady as ever, the woman who runs this household with the precision of a hospital ward and the heart of a mother who has loved fiercely for 37 years of marriage.

Ribs this week — spare ribs, dry-rubbed, five hours at 225, no foil, no rush. The Memphis way. The bark cracked when I bit into it, and the flavor was layered: smoke first, then spice, then the sweetness of the pork, each layer arriving on its own schedule, patient as a sermon. Rosetta ate two ribs and said nothing negative, which is a standing ovation from the toughest critic in my life.

Sunday at Mt. Zion, the choir sang and I sat in my pew and let the music hold me. The bass notes I used to add are quieter now — my voice is aging, the way everything ages — but the listening is its own participation, and the church holds me the way the church has held this community for a hundred years: faithfully, unconditionally, with room for everyone who shows up. I show up. That is enough.

All week I was thinking about smoke and spice and the way fall layers flavor into everything it touches — and after those ribs and that Sunday at Mt. Zion, I wanted to carry that same energy into something a little different, something that would let Rosetta sit down while I did the work for once. This Spicy Chicken Pumpkin Pizza is what came out of that mood: pumpkin for the season, heat for the soul, chicken because we always come back to chicken. It has that same quality I love in a good smoke — each layer arrives on its own schedule, and together they make something worth sitting still for.

Spicy Chicken Pumpkin Pizza

Prep Time: 15 min | Cook Time: 20 min | Total Time: 35 min | Servings: 4

Ingredients

  • 1 pre-made pizza dough (12–14 oz), room temperature
  • 3/4 cup canned pumpkin puree
  • 2 tablespoons olive oil, divided
  • 2 cloves garlic, minced
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1/2 teaspoon crushed red pepper flakes
  • Salt and black pepper to taste
  • 1 1/2 cups cooked chicken breast, shredded or thinly sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded sharp provolone or smoked gouda
  • 1/4 red onion, thinly sliced
  • 1/4 cup roasted red peppers, sliced
  • 2 tablespoons fresh sage leaves or 1 teaspoon dried sage
  • 2 tablespoons fresh parsley, chopped, for garnish

Instructions

  1. Preheat the oven. Place a pizza stone or baking sheet in the oven and preheat to 450°F. A hot surface gives you that crisp bottom crust.
  2. Make the pumpkin sauce. In a small bowl, stir together the pumpkin puree, 1 tablespoon olive oil, minced garlic, smoked paprika, cayenne, and a generous pinch of salt and pepper until smooth and combined.
  3. Prepare the dough. On a lightly floured surface, stretch or roll the pizza dough into a 12-inch round. Transfer to a sheet of parchment paper.
  4. Sauce the pizza. Spread the pumpkin mixture evenly over the dough, leaving a 1-inch border around the edge. Drizzle the remaining tablespoon of olive oil over the sauce.
  5. Layer the toppings. Scatter the shredded chicken evenly over the sauce, then layer on the mozzarella and provolone (or smoked gouda). Arrange the red onion slices, roasted red peppers, and sage leaves across the top. Finish with a pinch of red pepper flakes.
  6. Bake. Slide the parchment onto the preheated stone or baking sheet and bake for 18–22 minutes, until the crust is golden and the cheese is bubbling and lightly browned at the edges.
  7. Rest and garnish. Remove from the oven and let rest 3–4 minutes before slicing. Scatter fresh parsley over the top and add an extra pinch of red pepper flakes if you want the heat to speak for itself.
