The mi xao I made her on Friday hit that mark, and it got me thinking about the universal appeal of a noodle dish that’s crispy on the outside and tender within — the kind of thing that feels like a reward after a hard stretch. This spaghetti pie captures that same spirit: a golden, set crust of pasta that slices clean, layered with ricotta, savory meat sauce, and bubbling mozzarella. Ingredients
- 12 oz spaghetti
- 2 tablespoons unsalted butter
- 2 large eggs, lightly beaten
- 1/2 cup grated Parmesan cheese
- 1 cup whole-milk ricotta cheese
- 1 lb ground beef or mild Italian sausage
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1 1/2 cups marinara sauce
- 1 teaspoon Italian seasoning
- 1/2 teaspoon kosher salt, plus more for pasta water
- 1/4 teaspoon black pepper
- 1 1/2 cups shredded mozzarella cheese
- Fresh basil or flat-leaf parsley, for garnish (optional)
Instructions
- Preheat and prep. Preheat your oven to 375°F. Grease a 10-inch deep-dish pie plate or oven-safe skillet with cooking spray or butter and set aside.
- Cook the spaghetti. Bring a large pot of salted water to a boil. Cook spaghetti according to package directions until just al dente. Drain well and return to the pot.
- Form the crust. While the spaghetti is still warm, toss it with the butter until melted and evenly coated. Add the beaten eggs and Parmesan and toss again until fully combined. Press the spaghetti mixture into the prepared pie plate, using the back of a spoon to form an even crust that comes up the sides slightly. Set aside.
- Brown the meat. In a large skillet over medium-high heat, cook the ground beef or sausage with the diced onion, breaking up the meat as it cooks, until no pink remains, about 6–8 minutes. Add the garlic and cook 1 minute more. Drain any excess fat.
- Add the sauce. Stir in the marinara sauce, Italian seasoning, salt, and pepper. Simmer over medium heat for 5 minutes, stirring occasionally, until slightly thickened. Remove from heat.
- Layer the pie. Spread the ricotta evenly over the spaghetti crust. Spoon the meat sauce over the ricotta in an even layer. Top with the shredded mozzarella.
- Bake. Bake uncovered for 25–30 minutes, until the cheese is melted and bubbling and the edges of the spaghetti crust are golden and set. Let the pie rest for 5–10 minutes before slicing so it holds its shape cleanly.
- Serve. Slice into wedges and garnish with fresh basil or parsley if desired. Serve directly from the dish.
