After Zaria declared her lopsided pancake a masterpiece — and honestly, she wasn’t wrong — I knew this Valentine’s Day was going to be about the doing, not the perfecting. That energy carried right into the afternoon, when we pulled out the cookie cutters and she grabbed the heart-shaped one like she’d been waiting all year. These Soft Vanilla Bean Sugar Cookies are the natural next chapter to a morning like that: simple enough for little helpers, special enough to feel like a celebration, and good enough that nobody cares if the hearts come out looking a little more like blobs.
Soft Vanilla Bean Sugar Cookies
Prep Time: 20 min | Cook Time: 10 min | Total Time: 30 min (plus 1 hr chill time) | Servings: 24 cookies
Ingredients
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 1/2 cups granulated sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 vanilla bean, split and seeds scraped
- 1/2 cup sour cream
- Additional granulated sugar or sprinkles for topping (optional)
Instructions
- Whisk dry ingredients. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
- Cream butter and sugar. In a large bowl, beat the softened butter and granulated sugar together with a hand mixer or stand mixer on medium-high speed until light and fluffy, about 3 minutes.
- Add egg and vanilla. Beat in the egg, vanilla extract, and scraped vanilla bean seeds until fully combined.
- Mix in sour cream. Add the sour cream and mix on low until just incorporated.
- Combine wet and dry. Gradually add the flour mixture to the wet ingredients, mixing on low until a soft dough forms. Do not overmix.
- Chill the dough. Cover the dough with plastic wrap and refrigerate for at least 1 hour (or up to overnight). Chilling is key to keeping the cookies soft and holding their shape.
- Preheat and prep. When ready to bake, preheat your oven to 375°F. Line two baking sheets with parchment paper.
- Roll and cut. On a lightly floured surface, roll the dough out to about 1/4-inch thickness. Cut into shapes with your favorite cookie cutters (hearts work perfectly here). Place on prepared baking sheets about 1 inch apart.
- Add toppings. Sprinkle with granulated sugar or colorful sprinkles if desired.
- Bake. Bake for 9–11 minutes, until the edges are just barely set and the centers still look slightly underdone. Do not overbake — they firm up as they cool.
- Cool. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack. They should be soft, pillowy, and just barely golden at the edges.
