Slow Cooker Creamy Chicken Spaghetti

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup chicken broth
  • 1 small yellow onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/4 tsp smoked paprika
  • 8 oz spaghetti, cooked and drained
  • 8 oz Velveeta, cubed (or 4 oz cream cheese + 1 cup shredded cheddar)
  • 1 can (10 oz) diced tomatoes with green chiles (such as Rotel), drained
  • Fresh parsley, for garnish (optional)

Instructions

  1. Layer the slow cooker. Place chicken breasts in the bottom of a 6-quart slow cooker. Add diced onion, bell pepper, and minced garlic on top.
  2. Add the sauce. In a bowl, whisk together cream of chicken soup, cream of mushroom soup, chicken broth, garlic powder, onion powder, salt, pepper, and paprika. Pour evenly over the chicken and vegetables.
  3. Cook low and slow. Cover and cook on LOW for 4 to 6 hours, or on HIGH for 2 to 3 hours, until chicken is cooked through and tender enough to shred.
  4. Shred the chicken. Remove chicken breasts and shred using two forks. Return shredded chicken to the slow cooker and stir to combine with the sauce.
  5. Melt in the cheese. Add cubed Velveeta (or cream cheese and shredded cheddar) and the drained diced tomatoes with green chiles. Stir gently, cover, and cook on LOW for an additional 20 to 30 minutes until cheese is fully melted and sauce is creamy.
  6. Cook the pasta. While cheese melts, cook spaghetti according to package directions until al dente. Drain well.
  7. Combine and serve. Add cooked spaghetti to the slow cooker and fold together until pasta is evenly coated in the creamy chicken sauce. Taste and adjust salt and pepper as needed. Garnish with fresh parsley if desired and serve immediately.
