Slow-Cooked Lemon Chicken Orzo

Ingredients
- 2 lbs bone-in, skin-on chicken thighs (about 4–6 pieces)
- 1 1/2 teaspoons kosher salt, divided
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 cup dry orzo pasta
- 2 medium carrots, sliced into rounds
- 2 stalks celery, sliced
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- Zest and juice of 1 large lemon
- 2 tablespoons fresh parsley, chopped, for serving
Instructions
- Season the chicken. Pat chicken thighs dry with paper towels and season all over with 1 teaspoon kosher salt and the black pepper.
- Sear for color (optional but recommended). Heat olive oil in a skillet over medium-high heat. Sear chicken skin-side down for 3–4 minutes until golden. Transfer to the slow cooker skin-side up. (Skip this step if you need a lower-effort day — it still works.)
- Add the vegetables and aromatics. Scatter the onion, garlic, carrots, and celery around the chicken in the slow cooker. Sprinkle in the thyme, oregano, and remaining 1/2 teaspoon salt.
- Pour in the broth. Add the chicken broth, lemon zest, and lemon juice. The liquid should come about halfway up the chicken.
- Cook low and slow. Cover and cook on LOW for 4 hours, or until the chicken is very tender and pulls away from the bone easily.
- Shred the chicken. Remove the chicken pieces, discard the skin and bones, and shred the meat into large chunks. Return the meat to the slow cooker.
- Add the orzo. Stir in the dry orzo. Cover and cook on HIGH for 20–30 minutes, until the orzo is tender and has absorbed much of the broth. Stir once halfway through to prevent sticking.
- Finish and serve. Taste and adjust seasoning. Ladle into bowls and top with fresh parsley. Serve with crusty bread if you like.
