Five calves this week. The main calving push is on and I've been on interrupted sleep since the first week of March. This is the annual marathon and I've learned not to fight the exhaustion, just to work within it — to do the essential things and let the optional ones wait, to eat regularly and drink water constantly and take the four-hour stretches of sleep when they're available without trying to supplement them into something they're not.
Cole has been coming in at five in the morning on the heavy days to help. He doesn't need to — the apprenticeship is about farrier work — but he shows up with coffee and does what needs doing and doesn't make anything of it. That's character. I note it.
The session with Dr. Crain this week went to a place I'd been circling since January. I won't detail it. I'll say that the thing that happened with Sarah and then with Jen has a name — not a clinical diagnosis, just a pattern with a description — and that having the description doesn't undo the pattern but gives you something to work with. A handhold in the dark. You still have to do the climbing but you're no longer climbing blind.
Made a big pot of soup Thursday that lasted four days. Lentil and sausage, similar to the New Year's Eve batch, because calving season is a soup-for-every-meal period and lentils are the correct base. Fast to cook, filling, inexpensive, and patient about being reheated. The soup doesn't care that you're eating it at six in the morning after a two-hour nap. The soup is just there, warm, doing what it does. I appreciate that quality in a meal.
The soup got me through the week, but there were nights when even that felt like too much to manage — when I needed something I could pull together in one pan, between checks on the barn, without thinking. Skillet cabbage is that meal for me: inexpensive, fast, forgiving, and warm in the way that matters. It doesn’t ask anything of you, and right now that’s exactly the right quality in a recipe.
Skillet Cabbage

Ingredients
- 1 small head green cabbage (about 2 lbs), cored and roughly chopped
- 1 medium yellow onion, thinly sliced
- 2 cloves garlic, minced
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 1/2 tsp smoked paprika
- 1/4 tsp crushed red pepper flakes (optional)
- Salt and black pepper to taste
- 1 tbsp apple cider vinegar
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Heat the pan. In a large cast-iron or heavy skillet, melt butter with olive oil over medium-high heat until the butter begins to foam.
- Cook the onion. Add the sliced onion and cook, stirring occasionally, for 5–6 minutes until softened and beginning to turn golden at the edges.
- Add the garlic. Stir in the minced garlic and cook for 1 minute until fragrant. Don’t let it brown.
- Add the cabbage. Add the chopped cabbage in large handfuls, turning to coat with the butter and oil. It will look like too much — it will cook down significantly. Season with smoked paprika, red pepper flakes if using, salt, and black pepper.
- Saute until tender. Cook over medium-high heat, stirring every couple of minutes, for 12–15 minutes until the cabbage is wilted, slightly caramelized in spots, and tender throughout.
- Finish with vinegar. Remove from heat and stir in the apple cider vinegar. Taste and adjust seasoning. Garnish with parsley if you have it on hand.
