- 1 lb Italian sausage, casings removed (sweet or mild)
- 1 medium yellow onion, sliced thin
- 2 bell peppers (one red, one green), sliced into strips
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 1/2 cup pitted Kalamata olives, halved
- 2 tablespoons capers, drained
- 1 teaspoon dried oregano
- 1/2 teaspoon crushed red pepper flakes
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt, or to taste
- 12 oz rigatoni or penne pasta
- 2 tablespoons olive oil
- Fresh parsley, chopped, for garnish
- Grated Parmesan or Pecorino Romano, for serving
Instructions
- Cook the pasta. Bring a large pot of salted water to a boil. Cook rigatoni according to package directions until al dente. Reserve 1/2 cup pasta water before draining. Set pasta aside.
- Brown the sausage. Heat 1 tablespoon olive oil in a large deep skillet over medium-high heat. Add sausage and cook, breaking it into chunks with a wooden spoon, until browned and cooked through, about 7—8 minutes. Transfer to a plate and set aside.
- Soften the vegetables. In the same skillet, add remaining tablespoon of olive oil. Add onion and bell peppers and cook over medium heat, stirring occasionally, until softened and beginning to caramelize, about 8 minutes. Add garlic and cook 1 minute more until fragrant.
- Build the sauce. Return sausage to the skillet. Pour in crushed tomatoes and stir to combine. Add olives, capers, oregano, red pepper flakes, salt, and black pepper. Stir well and bring to a gentle simmer.
- Simmer and finish. Let sauce simmer uncovered for 10—12 minutes, stirring occasionally, until slightly thickened. If sauce feels tight, stir in a splash of reserved pasta water to loosen it.
- Combine and serve. Add drained pasta directly to the skillet and toss to coat everything evenly. Taste and adjust seasoning. Divide among bowls, garnish with fresh parsley, and pass Parmesan at the table.
