Ingredients
- 1 pre-made graham cracker pie crust (9-inch)
- 1 package (8 oz) cream cheese, softened
- 1 can (14 oz) sweetened condensed milk
- 1 package (3.4 oz) instant pistachio pudding mix
- 1 cup cold milk
- 1 cup frozen whipped topping, thawed, plus more for garnish
- 1/4 teaspoon almond extract
- Green sprinkles or crushed pistachios for garnish (optional)
Instructions
- Beat the cream cheese. In a large mixing bowl, beat the softened cream cheese with a hand mixer on medium speed until smooth and fluffy, about 2 minutes.
- Add condensed milk. Pour in the sweetened condensed milk and almond extract, then beat on low until fully combined and creamy, about 1 minute.
- Mix in pudding. Add the instant pistachio pudding mix and cold milk. Beat on medium speed for 2 minutes until the mixture begins to thicken.
- Fold in whipped topping. Gently fold in 1 cup of thawed whipped topping using a rubber spatula until no streaks remain. Do not overmix — keep it light.
- Fill the crust. Pour the filling into the graham cracker crust and smooth the top evenly with the spatula.
- Chill. Cover loosely with plastic wrap and refrigerate for at least 2 hours, or until the filling is fully set.
- Garnish and serve. Before serving, dollop or pipe additional whipped topping around the edges. Scatter green sprinkles or crushed pistachios over the top if desired. Slice and serve cold.
