Rustic Fruit Tart

Ingredients
- 1 1/4 cups all-purpose flour
- 1 tablespoon granulated sugar, plus 2 tablespoons for filling
- 1/4 teaspoon salt
- 1/2 cup (1 stick) cold unsalted butter, cut into small cubes
- 3–4 tablespoons ice water
- 2 cups mixed fresh or frozen fruit (such as peaches, plums, berries, or apples), sliced or halved
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1 egg, beaten (for egg wash)
- 1 tablespoon coarse sugar, for topping
Instructions
- Make the dough. In a large bowl, whisk together the flour, 1 tablespoon sugar, and salt. Add the cold butter cubes and work them into the flour with your fingertips—press, smear, and crumble until the mixture resembles coarse, shaggy crumbs with some pea-sized pieces of butter remaining. This is the part you do with your hands.
- Add water. Drizzle in ice water one tablespoon at a time, tossing with a fork after each addition, until the dough just comes together when you press a handful. Do not overwork it. Shape into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
- Prepare the filling. Toss the fruit with the remaining 2 tablespoons sugar, cornstarch, lemon juice, vanilla, and cinnamon until evenly coated. Set aside.
- Preheat and roll. Preheat oven to 400°F. On a lightly floured surface, roll the chilled dough into a rough 12-inch circle—edges don’t need to be perfect. Transfer to a parchment-lined baking sheet.
- Fill and fold. Mound the fruit filling in the center of the dough, leaving a 2-inch border. Fold the edges of the dough up and over the outer ring of fruit, pleating as you go to form a rustic rim. Press gently to hold.
- Finish and bake. Brush the folded crust with the beaten egg and sprinkle with coarse sugar. Bake for 32–38 minutes, until the crust is deep golden and the fruit is bubbling. Cool on the pan for at least 15 minutes before slicing.
