Roasted Parmesan Carrots

Ingredients
- 1 1/2 lbs carrots, peeled and cut into 3-inch sticks (or use baby carrots)
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/3 cup freshly grated Parmesan cheese
- 1 tablespoon fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat the oven. Heat oven to 425°F. Line a large rimmed baking sheet with parchment paper or foil for easy cleanup.
- Season the carrots. In a large bowl, toss the carrot sticks with olive oil, garlic powder, salt, and pepper until evenly coated.
- Arrange on the pan. Spread the carrots in a single layer on the prepared baking sheet, making sure they are not overlapping so they roast rather than steam.
- Roast. Roast in the preheated oven for 18–20 minutes, turning once halfway through, until the carrots are tender and beginning to caramelize at the edges.
- Add the Parmesan. Remove the pan from the oven and sprinkle the grated Parmesan evenly over the carrots. Return to the oven for 4–5 minutes, until the cheese is melted, lightly golden, and set.
- Finish and serve. Transfer to a serving dish, garnish with fresh parsley if desired, and serve warm alongside your Sunday main.
