Rich Chocolate Chip Coffee Cake — The Kitchen That Holds Us All

The soup is the Sunday anchor, but it was the cake — Will held close while it baked, Joy singing somewhere in the next room, Mama’s birthday present in every warm breath of the oven — that reminded me why I keep coming back to this kitchen at all. I’ve made this Rich Chocolate Chip Coffee Cake in versions of that same week more times than I can count, and every time the batter comes together I feel those four generations stacking up behind me, steady as anything. It is the kind of cake that does not need an occasion, because the occasion is always just this: people you love, a warm kitchen, and the practice of feeding them well.

Rich Chocolate Chip Coffee Cake

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup sour cream
  • 1 cup semi-sweet chocolate chips
  • Streusel Topping:
  • 1/3 cup granulated sugar
  • 1/3 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter, melted
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat and prepare. Preheat oven to 350°F. Grease a 9x13-inch baking pan and set aside.
  2. Make the streusel. In a small bowl, stir together the granulated sugar, brown sugar, cinnamon, and melted butter until combined. Fold in the 1/2 cup chocolate chips and set aside.
  3. Mix dry ingredients. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Cream butter and sugar. In a large bowl, beat the softened butter and 1 cup granulated sugar together with a hand or stand mixer on medium speed until light and fluffy, about 3 minutes.
  5. Add eggs and vanilla. Beat in the eggs one at a time, then mix in the vanilla extract until fully incorporated.
  6. Combine wet and dry. Reduce mixer speed to low. Add the flour mixture in three additions, alternating with the sour cream (beginning and ending with flour), mixing just until combined after each addition. Do not overmix.
  7. Fold in chocolate chips. Gently fold the 1 cup chocolate chips into the batter with a spatula.
  8. Assemble. Spread the batter evenly into the prepared pan. Sprinkle the streusel topping evenly over the surface.
  9. Bake. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean and the top is golden. Let cool in the pan for at least 15 minutes before slicing.
