The ISFA work continues — another kitchen table this week, another young family with numbers that might work. I sat across from a couple in Poweshiek County and laid out the grants and watched their faces change from fear to possibility, and the change is the thing I live for now.
The recipe this week: lemon chicken with capers. Standing at the stove, Marlene's wooden spoon in my hand (the cracked one, the one that will outlast us all), the recipe either from the card box or from my own expanding collection, both equally real, both equally mine. The kitchen holds all of it — the old recipes and the new ones, the teacher's food and the student's food, the grief and the joy and the cinnamon. All of it. Always.
Seed starting continues at the Holloway household — the windowsill green, the grow lights purple, the soil mix precise. The annual miracle of February and March: things grow even when everything says they shouldn't. The growing is the argument against everything.
The seed trays on the windowsill made me want to bake with something that comes straight from the ground—and nothing speaks to that February stubbornness quite like rhubarb, which will push up through cold soil before anyone has given it permission. I pulled this rhubarb dump cake together on the same afternoon I was thinking about that couple in Poweshiek County, their faces shifting from fear to possibility, and the simplicity of it felt right: you don’t fuss, you don’t overthink, you just layer and trust and let the oven do what ovens know how to do. Marlene would have approved—she had no patience for recipes that made themselves more complicated than they needed to be.
Rhubarb Dump Cake

Ingredients
- 5 cups fresh or frozen rhubarb, sliced into 1/2-inch pieces
- 1 cup granulated sugar
- 1 package (3 oz) strawberry gelatin (such as Jell-O)
- 1 package (15.25 oz) yellow cake mix, dry
- 1/2 cup water
- 1/2 cup (1 stick) unsalted butter, thinly sliced
- Whipped cream or vanilla ice cream, for serving (optional)
Instructions
- Preheat the oven. Heat your oven to 350°F. Grease a 9x13-inch baking dish lightly with butter or nonstick spray.
- Layer the rhubarb. Spread the sliced rhubarb evenly across the bottom of the prepared baking dish in a single layer.
- Add sugar and gelatin. Sprinkle the granulated sugar evenly over the rhubarb, then sprinkle the dry strawberry gelatin powder over the top of the sugar.
- Dump the cake mix. Pour the dry yellow cake mix over the gelatin layer, spreading it as evenly as possible without stirring. Do not mix the layers together.
- Add water and butter. Drizzle the water evenly over the top of the dry cake mix. Lay the thin slices of butter across the surface, covering as much of the top as possible.
- Bake. Bake uncovered for 40–45 minutes, until the top is golden brown and the rhubarb filling is bubbling up around the edges. The butter should be fully melted and the cake layer set.
- Cool slightly and serve. Let the cake rest for 10 minutes before scooping into bowls. Serve warm with whipped cream or a scoop of vanilla ice cream if you like.
