When the numbers are steady and the deliveries have gone out and the bakery is humming along, I find myself wanting to honor that rhythm with something that has the same honest quality — something that starts with bread and ends with satisfaction. Reuben Rolls feel exactly right for a week like this one: they’re unpretentious, they’re built around dough, and they bring people together around the table without any fuss. Ingredients

  • 1 can (13.8 oz) refrigerated pizza dough
  • 1/2 lb thinly sliced corned beef
  • 1 cup sauerkraut, well drained and patted dry
  • 6 slices Swiss cheese, halved
  • 1/4 cup Thousand Island dressing, plus more for dipping
  • 1 egg, beaten (for egg wash)
  • 1 teaspoon caraway seeds (optional)
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat oven. Heat oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  2. Prepare the dough. Unroll the pizza dough onto a lightly floured surface and stretch it into a rough 12x9-inch rectangle.
  3. Spread the dressing. Spread Thousand Island dressing evenly over the surface of the dough, leaving a 1/2-inch border on all edges.
  4. Layer the fillings. Lay the Swiss cheese halves over the dressing, then layer the corned beef evenly on top. Spread the drained sauerkraut over the corned beef in an even layer.
  5. Roll and slice. Starting from the long edge, roll the dough tightly into a log. Pinch the seam to seal. Using a sharp knife or unflavored dental floss, cut the log into 12 equal rounds.
  6. Arrange and top. Place rolls cut-side up on the prepared baking sheet, spacing them about 1 inch apart. Brush each roll with egg wash and sprinkle with caraway seeds and garlic powder if using.
  7. Bake. Bake for 18—22 minutes, until the rolls are golden brown and the cheese is melted and bubbling at the edges.
  8. Serve. Let cool for 5 minutes before serving. Offer extra Thousand Island dressing on the side for dipping.
