- 3/4 cup warm milk (110°F)
- 1/4 cup granulated sugar, divided

- 3 tablespoons unsalted butter, softened
- 1 large egg
- 3/4 cup raspberry jam or preserves
- 1/2 cup fresh or frozen raspberries (optional, for filling)
- Glaze: 1 cup powdered sugar, 2–3 tablespoons milk, 1/2 teaspoon vanilla extract
Instructions
- Activate the yeast. In a small bowl, combine warm milk, yeast, and 1 tablespoon of the sugar. Stir gently and let sit 5–10 minutes until foamy.
- Make the dough. In a large bowl, whisk together flour, remaining sugar, and salt. Add the softened butter, egg, and yeast mixture. Stir until a shaggy dough forms, then turn out onto a lightly floured surface and knead 6–8 minutes until smooth and elastic.
- First rise. Place dough in a lightly greased bowl, cover with a clean towel or plastic wrap, and let rise in a warm spot until doubled in size, about 1 hour.
- Shape the braid. Punch dough down and roll out on a floured surface to a 12x16-inch rectangle. Transfer to a parchment-lined baking sheet. Spread raspberry jam evenly down the center third of the dough, leaving a 1-inch border at the top and bottom. Scatter fresh raspberries over the jam if using.
- Cut and braid. Using a sharp knife or pastry cutter, make diagonal cuts about 1 inch apart along both sides of the filling, stopping just at the edge of the filling. Fold strips over the filling in an alternating pattern, left then right, to create a braided look. Tuck the ends under to seal.
