Ranch Mushrooms — A Quiet Sunday That Held Everything Together

Sunday: beef stew.

Sundays have a way of asking for something warm and uncomplicated — and after a week of miles on the road, watching Gayle, and letting the weight of a whole year of book-two milestones settle into me, that’s exactly what I needed. The beef stew was already on my mind, but it was these Ranch Mushrooms — earthy, buttery, barely any effort — that became the quiet heart of the meal, the thing that made the kitchen smell like home while I let myself just breathe. Sometimes the simplest dish is the one that does the most.

Ranch Mushrooms

Ingredients

  • 1 lb whole button or cremini mushrooms, cleaned and stems trimmed
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon olive oil
  • 1 packet (1 oz) dry ranch seasoning mix
  • 3 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat. Heat your oven to 400°F. Line a rimmed baking sheet with foil for easy cleanup.
  2. Mix the coating. In a large bowl, whisk together the melted butter, olive oil, ranch seasoning mix, minced garlic, onion powder, and black pepper until combined.
  3. Coat the mushrooms. Add the mushrooms to the bowl and toss well until every mushroom is evenly coated with the seasoned butter mixture.
  4. Arrange and roast. Spread the mushrooms in a single layer on the prepared baking sheet, making sure they are not crowded. Roast for 20–22 minutes, stirring once halfway through, until the mushrooms are golden, tender, and slightly caramelized at the edges.
  5. Finish and serve. Transfer to a serving dish, scraping any pan juices over the top. Garnish with fresh parsley and serve warm alongside your main dish.
