School ends this week — the last days with their particular looseness, the kids coming home earlier each afternoon, the lunch packing mercifully ending for summer. I feel the shift in the house, the way the rhythm changes key. Summer cooking is different from school-year cooking. More spontaneous, more outdoor, more fruit. Fewer packed lunches, more snacks left on the counter that disappear without comment.
Last session of the Jefferson Elementary parent series. Session six, the finale. We did a full meal together — everyone cooking something that became part of a shared dinner at the end. One parent made the salad, another the main, another the grain, another the dessert. It was deliberately collaborative. I wanted the last class to be about community as much as technique.
The school nutrition coordinator, whose name is Beverly, said she wanted to bring me back in the fall for a new series with a different school. I said yes without hesitation this time. I've learned that the logistics will work themselves out if the decision is right.
The channel is at 82,000. Growth is steady. I've started to feel less awed by the numbers and more interested in the conversations — the comments that are actually questions, the DMs from people using specific recipes, the small ecology of people who seem to have found each other through the comments. I'm not sure what to do with that yet but I'm paying attention.
Summer starts tomorrow. I have a plan for the garden, a plan for the workshops, no plan for August and I'm leaving it that way on purpose.
At that last session, one of the parents made the salad — and watching her bring it to the shared table, watching it become part of something bigger, reminded me why a simple, fresh dish is never just simple. This radish and carrot salad is what I would have made if it had been my turn: fast enough not to distract from the conversation, colorful enough to feel like a celebration, and bright with cilantro in a way that tastes unmistakably like the start of summer. I’ve been making versions of it all week, partly because the garden radishes are finally ready, and partly because I’m not quite done sitting with how good that last class felt.
Radish Carrot Cilantro Salad
Prep Time: 15 min | Cook Time: 0 min | Total Time: 15 min | Servings: 4
Ingredients
- 1 bunch radishes (about 10–12), thinly sliced
- 3 medium carrots, peeled and julienned or coarsely grated
- 1/2 cup fresh cilantro leaves, roughly chopped
- 3 tablespoons fresh lime juice (about 2 limes)
- 2 tablespoons olive oil
- 1 teaspoon honey
- 1/4 teaspoon ground cumin
- 1/4 teaspoon kosher salt, plus more to taste
- 1/8 teaspoon black pepper
- 1 small jalapeño, seeded and minced (optional)
Instructions
- Prep the vegetables. Slice the radishes as thin as you can — a mandoline works well here, but a sharp knife does the job. Julienne or coarsely grate the carrots so they’re roughly the same size as the radish slices. Add both to a large mixing bowl.
- Make the dressing. In a small bowl, whisk together the lime juice, olive oil, honey, cumin, salt, and pepper until combined. If you’re using jalapeño, stir it in here.
- Toss and season. Pour the dressing over the radishes and carrots and toss well to coat. Add the cilantro and toss again gently. Taste and adjust salt or lime as needed.
- Rest briefly and serve. Let the salad sit for 5 minutes before serving so the vegetables just begin to soften and absorb the dressing. Serve at room temperature or slightly chilled.
