Liam started sitting unassisted this week. One minute he needed the hand behind him, the next minute he just... didn't. These pumpkin spice cookies are exactly that: warm and unpretentious, the kind of thing that makes the kitchen smell like the reason you love this time of year.
Pumpkin Spice Cookies

Ingredients
- 2 1/4 cups all-purpose flour
- 1 1/2 teaspoons pumpkin pie spice
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 1 cup canned pumpkin puree
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1/4 cup granulated sugar (for rolling)
- 1 teaspoon cinnamon (for rolling)
Instructions
- Preheat oven. Heat oven to 375°F. Line two baking sheets with parchment paper.
- Whisk dry ingredients. In a medium bowl, whisk together the flour, pumpkin pie spice, baking soda, and salt. Set aside.
- Cream butter and sugars. In a large bowl, beat softened butter with granulated sugar and brown sugar on medium speed until light and fluffy, about 2–3 minutes.
- Add wet ingredients. Beat in the pumpkin puree, eggs, and vanilla extract until fully combined. The mixture may look slightly curdled — that’s fine.
- Combine. Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
- Prepare rolling sugar. In a small bowl, stir together the 1/4 cup granulated sugar and 1 teaspoon cinnamon.
- Portion and roll. Scoop dough by rounded tablespoons, roll briefly into balls, then roll each in the cinnamon sugar. Place 2 inches apart on prepared baking sheets.
- Bake. Bake for 11–13 minutes, until the edges are set and the tops look just dry. Centers will be soft — they firm up as they cool.
- Cool. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
