Payasam was what I made, but Payasam is not what I have a recipe for—because Amma never wrote it down, and I am not ready to write mine yet. What I can offer is the spirit of it: something sweet and spiced and patient, made for no occasion except the one you carry quietly inside you. This Pumpkin Mousse is what the kitchen handed me when I reached for comfort—warm with cinnamon, gentle with cream, the kind of thing you make in small batches and bring to the room where someone is sleeping, just to fill it with sweetness.
Pumpkin Mousse

Ingredients
- 1 cup pumpkin puree (not pumpkin pie filling)
- 1 1/2 cups heavy whipping cream, cold
- 4 oz cream cheese, softened
- 1/2 cup powdered sugar, sifted
- 1 teaspoon pure vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- Pinch of fine sea salt
- Whipped cream and a dusting of cinnamon, to serve
Instructions
- Beat the cream cheese. In a large bowl, beat the softened cream cheese with a hand mixer on medium speed until completely smooth, about 2 minutes. Scrape down the sides of the bowl.
- Add pumpkin and spices. Add the pumpkin puree, powdered sugar, vanilla extract, cinnamon, ginger, nutmeg, cloves, and salt. Beat on medium until fully combined and smooth, about 2 minutes more. Set aside.
- Whip the cream. In a separate chilled bowl, whip the cold heavy cream on high speed until stiff peaks form, 3—4 minutes. Do not overbeat.
- Fold together gently. Add one-third of the whipped cream to the pumpkin mixture and stir to lighten it. Fold in the remaining whipped cream in two additions using a rubber spatula, working slowly to keep the mousse airy.
- Chill. Spoon the mousse into serving cups or glasses. Cover and refrigerate for at least 2 hours, until set and cold through.
- Serve. Top with a generous swirl of whipped cream and a dusting of ground cinnamon before serving.
