Marcus turns fifteen. The birthday steak tradition continues — ribeye, cast iron, Mama's skillet. But this year Marcus cooked his own steak. He said, "I got this." I said, "You got this." He seared it perfectly. Medium-rare. Salt and pepper and a confidence that comes from three years of watching and one year of doing. He plated it himself. He sat down. He ate his own steak. He was fifteen and self-sufficient at the stove and I thought of Mama saying, "The kitchen is where women find their power," and I amended it silently: the kitchen is where PEOPLE find their power. Marcus found his. With a cast iron skillet and a ribeye and the certainty of a boy who knows he got this.
Derek gave him a journal. Not a book this time — a journal. He said, "For the arguments you have with yourself." Marcus looked at it. He looked at Derek. He said, "Thank you, Derek." Not "Mr. Derek." Not "sir." Derek. The name without the title. The barrier removed. Two years of mini golf and debate tournaments and back-row attendance and one "Just Mercy" and one journal and the name is just Derek now. Progress measured in syllables. The formal distance closing, one meal at a time.
After watching Marcus command that cast iron skillet like he’d been doing it his whole life, I wasn’t ready to put it away — that skillet deserved another night on the stove. This Potato-Topped Ground Beef Skillet became our follow-up celebration meal, the kind of hearty, no-fuss dinner that honors the same cast iron energy Marcus brought to his birthday ribeye. It’s the dish I hand off to him now when I want to watch him own the kitchen, because a boy who can sear a ribeye to medium-rare can absolutely handle this.
Potato-Topped Ground Beef Skillet
Prep Time: 15 min | Cook Time: 30 min | Total Time: 45 min | Servings: 4
Ingredients
- 1 lb lean ground beef
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup frozen corn kernels
- 1/2 cup beef broth
- 1 tsp Worcestershire sauce
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 3 medium russet potatoes, peeled and thinly sliced (about 1/8-inch thick)
- 1 cup shredded cheddar cheese
- 1 tbsp olive oil
- Fresh parsley, chopped, for garnish
Instructions
- Brown the beef. Heat a large cast iron or oven-safe skillet over medium-high heat. Add ground beef and cook, breaking it apart, until no longer pink, about 6–8 minutes. Drain excess fat.
- Build the base. Add diced onion to the skillet and cook with the beef for 3 minutes until softened. Stir in garlic and cook 1 minute more until fragrant.
- Add the sauce. Pour in diced tomatoes, beef broth, and Worcestershire sauce. Stir in smoked paprika, salt, and pepper. Add frozen corn and stir to combine. Let simmer over medium heat for 5 minutes.
- Layer the potatoes. Preheat oven to 375°F. Toss potato slices with olive oil, a pinch of salt, and a pinch of pepper. Arrange them in an overlapping layer over the top of the beef mixture, covering it completely.
- Bake until tender. Transfer the skillet to the oven and bake uncovered for 20 minutes, until potatoes are fork-tender and beginning to turn golden at the edges.
- Add cheese and finish. Sprinkle shredded cheddar evenly over the potato layer. Return to oven for 5 minutes, until cheese is melted and bubbling.
- Rest and serve. Remove from oven and let rest 5 minutes. Garnish with fresh parsley and serve directly from the skillet.
