The smaller Thanksgiving was unexpectedly beautiful. Five people around MawMaw's table instead of the usual overflow, and the quality of the food and conversation was not diminished — if anything it was concentrated, more present, the attention less divided. MawMaw said afterward that some things you get to appreciate more when they are small. I think she meant the holiday and also other things.
My corn maque choux was right. Uncle Terrence, who is my most reliable barometer, said it tasted like MawMaw's. MawMaw said, with the timing she has for these moments, "It is better." I looked at her. She said, "She used a little more cream than I do. Richer." She looked at me with an expression that was both pride and the specific pleasure of being surpassed by someone you taught. I held that expression in my memory. It is one I want to remember for the rest of my life.
The macaroni and cheese was the best I had ever made. The sweet potato pie was consistent with my last three, which were all excellent. Daddy said the meal was the best Thanksgiving he had in memory and he meant it — not as a general compliment but as a precise assessment. He is not given to general compliments. He says specific things.
MawMaw and I sat on the porch after dinner in the mild November afternoon. She told me she had been thinking about her kitchen and what she wanted to do with her recipe collection — the real one, the bound one she had kept for fifty years. She said she wanted me to have it when the time came. I said I did not want to talk about when the time came. She said she knew I didn't. She said it was better to say it when it was just a thought than when it was an urgency. I said she was right. She is always right.
That Thanksgiving table had very few dishes on it, which meant every single one had to carry weight — and this Potato Pumpkin Mash was the one I kept coming back to between bites, the one that felt most like what MawMaw would call “the steady dish,” the thing that holds everything else together without asking for attention. I’ve made it every fall since, and it carries that mild November afternoon with it every time — the porch, the light, the conversation I will always be grateful we had while it was still just a thought and not an urgency.
Potato Pumpkin Mash
Prep Time: 15 min | Cook Time: 25 min | Total Time: 40 min | Servings: 6
Ingredients
- 2 lbs Yukon Gold potatoes, peeled and cut into 1-inch cubes
- 1 cup pure pumpkin puree (not pumpkin pie filling)
- 4 tablespoons unsalted butter
- 1/2 cup heavy cream, warmed
- 1/2 teaspoon kosher salt, plus more to taste
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cinnamon
- 2 tablespoons fresh chives, thinly sliced (for garnish)
Instructions
- Boil the potatoes. Place cubed potatoes in a large pot and cover with cold salted water by about 1 inch. Bring to a boil over high heat, then reduce to a steady simmer. Cook until potatoes are completely tender when pierced with a fork, about 18—22 minutes.
- Drain and dry. Drain the potatoes thoroughly in a colander, then return them to the warm pot. Set over low heat for 1—2 minutes, shaking the pot gently, to let any remaining moisture steam off. This helps the mash stay fluffy and not watery.
- Mash and combine. Remove the pot from heat. Add the butter and mash with a potato masher or ricer until smooth. Fold in the pumpkin puree until fully incorporated and the color is uniform.
- Add the cream. Pour in the warmed heavy cream a little at a time, stirring gently after each addition until you reach your preferred consistency — rich and smooth but still with some body. Do not over-mix or the potatoes will turn gluey.
- Season. Stir in the salt, pepper, nutmeg, and cinnamon. Taste and adjust seasoning as needed. The spices should whisper, not shout — just enough warmth to remind you it’s fall.
- Serve. Transfer to a warm serving bowl, make a small well in the center, and add a small pat of butter if desired. Scatter fresh chives over the top and serve immediately.
