Mom’s fried chicken has always been the celebration food in our house — the dish that comes out when something worth marking has happened — and this week gave me more reasons to fry than I could count. Since Caleb has declared himself a pizza person (he announces it with the same confidence he used walking into preschool), I gave the celebration chicken his spin: rolled up with marinara, mozzarella, and all the golden, bubbling drama he deserves. These Pizza Chicken Roll-Ups are what “signing chicken” looks like when a three-year-old in a ‘Caleb’s Kitchen’ apron gets a vote. He didn’t look back at me at drop-off, but he looked back for seconds at dinner — and I’ll take it.
Pizza Chicken Roll-Ups

Ingredients
- 4 boneless, skinless chicken breasts (about 6 oz each)
- 1/2 cup marinara sauce, plus extra for serving
- 1 cup shredded mozzarella cheese, divided
- 2 oz sliced pepperoni (about 24 slices)
- 1/4 cup freshly grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon crushed red pepper flakes (optional)
- Salt and black pepper to taste
- 1 tablespoon olive oil
- Fresh basil for garnish (optional)
Instructions
- Preheat and prepare. Preheat oven to 375°F. Lightly grease a 9x13-inch baking dish with olive oil and set aside.
- Pound the chicken. Place each chicken breast between two sheets of plastic wrap. Using a meat mallet or rolling pin, pound to an even 1/4-inch thickness. Season both sides with salt, pepper, garlic powder, and onion powder.
- Layer the filling. Spread 2 tablespoons of marinara sauce over the top side of each flattened breast, leaving a 1/2-inch border at the edges. Divide the pepperoni slices evenly among the four breasts, layering them over the sauce. Sprinkle each with 3 tablespoons of mozzarella cheese and a pinch of Italian seasoning.
- Roll and secure. Starting from the short end, roll each breast tightly into a log shape. Secure with 2–3 toothpicks to hold the seam closed. Place seam-side down in the prepared baking dish.
- Top and bake. Brush the tops of the roll-ups lightly with olive oil. Spoon a tablespoon of marinara over each one, then top with the remaining mozzarella and the Parmesan. Sprinkle with red pepper flakes if using. Bake uncovered for 30–35 minutes, until the chicken is cooked through (internal temperature 165°F) and the cheese is golden and bubbling.
- Rest and serve. Remove toothpicks. Let the roll-ups rest for 5 minutes before slicing. Serve with warm marinara sauce on the side and garnish with fresh basil if desired.
