Pineapple Cream Pie — The Birthday Dessert I Made When Luis Burned the Chilaquiles (Again)

My birthday. May 5, 2029. Fifty-two. Luis burned the chilaquiles — year forty. FORTY YEARS of charred chilaquiles. The number deserves its own anniversary cake. I made tres leches. I had already decided I wasn’t going to attempt a full tres leches this year — not with smoke still hanging in the kitchen from Luis’s annual chilaquiles incident — so I wanted something cool, creamy, and utterly effortless that still felt like a celebration. Pineapple Cream Pie has that quality I love in a birthday dessert: it looks like you tried very hard, and yet it forgives you completely for the chaos happening everywhere else. With one hundred and seventy-five thousand in combined bakery revenue on the horizon and a cookbook almost finished, I figured I had earned a pie that practically makes itself.

Pineapple Cream Pie

Ingredients

  • 1 pre-baked 9-inch graham cracker crust
  • 1 package (8 oz) cream cheese, softened
  • 1 can (20 oz) crushed pineapple, well drained (reserve 2 tablespoons juice)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 container (8 oz) frozen whipped topping, thawed, divided
  • 1/4 cup sweetened shredded coconut, lightly toasted (optional garnish)
  • Maraschino cherries for garnish (optional)

Instructions

  1. Drain the pineapple. Press crushed pineapple firmly in a fine-mesh strainer or between paper towels until very dry. Excess moisture will make the filling loose, so take your time here.
  2. Beat the cream cheese. In a large bowl, beat softened cream cheese with an electric mixer on medium speed until completely smooth and fluffy, about 2 minutes. Scrape down the sides of the bowl.
  3. Add sugar and flavoring. Add powdered sugar, vanilla extract, and reserved 2 tablespoons of pineapple juice. Beat on medium until fully combined and smooth.
  4. Fold in pineapple and whipped topping. Gently fold in the drained crushed pineapple, then fold in 2 cups of the whipped topping until just combined — keep it light to preserve the airy texture.
  5. Fill the crust. Spoon the filling evenly into the prepared graham cracker crust and smooth the top with a spatula.
  6. Top and chill. Spread or dollop remaining whipped topping over the filling. Scatter toasted coconut over the top if using. Refrigerate for at least 2 hours, or until firmly set.
  7. Garnish and serve. Just before serving, add maraschino cherries if desired. Slice with a sharp knife wiped clean between cuts for neat slices.
