Pesto Halibut

Ingredients
- 4 halibut fillets (6 oz each), skin removed
- 1/2 cup prepared basil pesto (store-bought or homemade)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 lemon, half juiced and half cut into wedges for serving
- 2 tablespoons fresh basil or flat-leaf parsley, roughly chopped, for garnish
Instructions
- Preheat. Preheat your oven to 400°F (or heat a grill pan over medium-high heat). Line a baking sheet with parchment paper if using the oven.
- Prepare the fish. Pat halibut fillets dry with paper towels. Drizzle with olive oil and season both sides with salt, pepper, and red pepper flakes if using.
- Apply the pesto. Stir the minced garlic and lemon juice into the pesto. Spread 2 tablespoons of the pesto mixture evenly over the top of each fillet.
- Cook. For oven method: place fillets on the prepared baking sheet and roast for 10–12 minutes, until the fish flakes easily with a fork and the pesto is fragrant and just beginning to brown at the edges. For grill pan method: cook fillets pesto-side up for 5–6 minutes, then carefully flip and cook another 3–4 minutes until cooked through.
- Rest and serve. Remove from heat and let rest for 2 minutes. Garnish with fresh basil or parsley and serve with lemon wedges alongside roasted vegetables, rice, or a simple green salad.
