The nursery question. We've been sleeping on it—the space question, how to fit two kids in this apartment—and we've arrived at the same answer we kept arriving at: Nora in our room for the first six months, then Liam and Nora sharing a room, then we figure out the house situation. We've been saying "the house situation" like a polite placeholder. The house situation is: we want to buy a house in Quincy and we don't have the down payment yet and the timeline is two to three years and by then both kids will need their own rooms.
I've been mapping the finances the way I map clinical problems: what do we have, what do we need, what are the steps in between. Sean earns well in construction. I earn reasonably in nursing. We've been saving for two years since we started thinking about it—not perfectly, not at the rate I'd want, but consistently. The math is possible. Three years is not forever.
Twenty-five weeks. Nora is active at night, which means my sleep is the familiar negotiation of third trimester. Sean bought me a new body pillow without being asked. It arrived on Tuesday. He just mentioned it at dinner: "I ordered you that pillow." I said thank you. He said "you've been not sleeping for three weeks." He notices. He always notices.
Made gingerbread this week—the dense spiced cake kind, not cookies—with a lemon cream. It was the right December dessert, the smell of cloves and ginger filling the apartment, Liam on the stool watching me mix with an expression of close scientific observation. He ate two pieces. He asked Nora if she wanted some. He patted my stomach. She kicked. He said "she likes it."
The gingerbread cake was the main event that week — the one that filled the apartment with cloves and ginger and got Liam so invested he was patting my stomach to report the verdict — but I also made these Peppermint Pretzel Dippers as a little extra, something for the cookie tin we keep on the counter through December. They’re the kind of recipe that requires almost no effort and still feels like a celebration, which is exactly what I needed at twenty-five weeks with a toddler and a body pillow and a three-year house plan quietly humming in the background. Simple, festive, and Liam ate four before I could get the lid on the tin.
Peppermint Pretzel Dippers
Prep Time: 10 minutes | Cook Time: 5 minutes | Total Time: 30 minutes (includes setting time) | Servings: 24
Ingredients
- 24 pretzel rods
- 2 cups white chocolate chips or white melting wafers
- 1/2 cup semisweet or dark chocolate chips
- 1/2 teaspoon peppermint extract
- 1/3 cup crushed candy canes (about 4 standard candy canes)
- 1 tablespoon coconut oil or vegetable shortening, divided
- Pinch of flaky sea salt (optional)
Instructions
- Prep your workspace. Line a large baking sheet with parchment paper and set it near your dipping area. Crush the candy canes by placing them in a zip-top bag and rolling with a rolling pin until you have fine and medium pieces mixed together. Pour into a shallow bowl.
- Melt the white chocolate. Combine white chocolate chips and 1/2 tablespoon coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until fully melted and smooth. Stir in the peppermint extract.
- Dip the pretzels. Hold each pretzel rod by the dry end and dip roughly two-thirds of it into the melted white chocolate, letting the excess drip off. Lay on the prepared parchment-lined sheet.
- Add the candy cane topping. While the white chocolate is still wet, sprinkle generously with crushed candy cane pieces. Add a pinch of flaky sea salt if using. Work in small batches so the chocolate doesn’t set before you can add the toppings.
- Melt the dark chocolate. Melt semisweet chocolate chips with the remaining 1/2 tablespoon coconut oil in the same way. Transfer to a small zip-top bag, snip a tiny corner, and drizzle over the dipped pretzels in a zigzag pattern.
- Set and serve. Allow the pretzels to set completely at room temperature for about 15–20 minutes, or place the tray in the refrigerator for 10 minutes to speed things up. Store in an airtight container at room temperature for up to one week.
