Parmesan Snap Pea Pasta

Ingredients
- 12 oz linguine or spaghetti
- 2 cups fresh sugar snap peas, trimmed and halved
- 3 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1/2 cup dry white wine or chicken broth
- 3/4 cup freshly grated Parmesan cheese, plus more for serving
- 1/2 cup reserved pasta water
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1/4 teaspoon crushed red pepper flakes
- Salt and black pepper to taste
- 2 tablespoons fresh parsley or basil, chopped
Instructions
- Cook the pasta. Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Before draining, reserve 1/2 cup of pasta water. Drain and set aside.
- Blanch the snap peas. In the last 2 minutes of the pasta’s cook time, add the snap peas directly to the boiling pasta water. They should turn bright green and stay crisp-tender. Drain together with the pasta.
- Build the sauce. In a large skillet over medium heat, melt the butter. Add the garlic and red pepper flakes and cook, stirring, for about 1 minute until fragrant. Pour in the white wine or chicken broth and let it reduce by half, about 2–3 minutes.
- Combine and toss. Add the drained pasta and snap peas to the skillet. Pour in the lemon juice and toss everything together. Add the reserved pasta water a splash at a time to loosen the sauce as needed.
- Finish with Parmesan. Remove from heat and stir in the grated Parmesan and lemon zest until the cheese melts into a silky coating on the pasta. Season generously with salt and black pepper.
- Serve. Plate into bowls and top with fresh parsley or basil and additional Parmesan. Serve immediately.
