Parmesan Chicken Couscous -- A Birthday Dinner Made with the Same Hands, the Same Love

Heather turns 39. Tom said: "Last year in your thirties." I said: "The thirties were the hardest and best decade of my life." He said: "The forties will be better." He's right.

The food this week: roast chicken, birthday dinner. Made with the same hands, in the same kitchen, with the same love that has been the foundation of everything — every pot roast, every cinnamon roll, every grilled steak, every birthday cake. Parmesan Chicken Couscous

Ingredients

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 1 1/2 cups couscous
  • 1 3/4 cups chicken broth, plus more for cooking chicken
  • 3/4 cup freshly grated Parmesan cheese, divided
  • 2 tablespoons olive oil, divided
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh baby spinach
  • 2 tablespoons fresh parsley, chopped
  • 1 lemon, zested and juiced

Instructions

  1. Season the chicken. Pat chicken breasts dry with paper towels. In a small bowl, combine Italian seasoning, smoked paprika, salt, and pepper. Rub seasoning evenly over both sides of each chicken breast.
  2. Sear the chicken. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken and cook 6–7 minutes per side, until golden brown and cooked through (internal temperature of 165°F). Transfer to a cutting board and let rest 5 minutes.
  3. Saute the aromatics. In the same skillet, reduce heat to medium and add the remaining 1 tablespoon olive oil. Add garlic and cook, stirring, for about 1 minute until fragrant. Add cherry tomatoes and cook 2–3 minutes until they begin to soften.
  4. Cook the couscous. Pour chicken broth into the skillet and bring to a boil. Stir in the couscous, then remove from heat. Cover and let stand 5 minutes. Fluff with a fork.
  5. Finish with greens and cheese. Stir spinach into the hot couscous until just wilted. Fold in 1/2 cup of the Parmesan cheese, lemon zest, and lemon juice. Season to taste with salt and pepper.
  6. Slice and serve. Slice the rested chicken and arrange over the couscous. Top with remaining 1/4 cup Parmesan and fresh parsley. Serve immediately.
