Early May 2026. Mother's Day approaching.
Tuesday food bank: chicken stew. Marcus made it. Wes from La Cocina came to observe — he had asked if he could volunteer at the food bank as part of his culinary studies. I said yes. He chopped onions next to Mr. Patterson, which was the next-generation pairing. Wes was twenty. Mr. Patterson was sixty-five. The kitchen was reaching across the years.
Wednesday La Cocina cohort 4 week six: pasteles condensed format. Same lesson. Wes assisted me — pre-prep was now Wes's job. He had taken to it. I let him.
Thursday Mother's Day was Sunday. The family was coming. I was the mother and the daughter and the grandmother. The rotation was full this year. Eduardo and I were going to drive Mami over at 11 AM. Mami had said yes. Mami had also said, "Carmen, I am tired this year. I want to come and to leave by 3." I said, "Mami, yes."
Friday I made flan with Sofía at our house. She was teaching herself — she had committed to making the flan from now on, not just for Easter, every Mother's Day, every Christmas, every birthday Mami had left. The flan was correct. Mami had been calling it correct for two months. Sofía was confident now. I sat at the kitchen counter and watched her make it. I was a witness, not a teacher. The chain. The chain.
Mother's Day Sunday: nineteen people. Mami came. The grandchildren brought her flowers and drawings. Lucas brought his recipe notebook to show her. At 3 PM Eduardo drove Mami home. The rest of the day was the family. The kitchen was loud. The mothers were honored. Sofía hugged me at one point and said, "Ma, this was a good Mother's Day." I said, "Mija, yes. The good ones build up." Wepa.
Sofía made the flan this year — she’s claimed that one fully, and I am only a witness now, which is exactly right. No Bake Strawberry Cheesecake

Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 tablespoons granulated sugar
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon pure vanilla extract
- 2 cups heavy whipping cream, cold
- 1 lb fresh strawberries, hulled and sliced
- 1/4 cup strawberry jam or preserves
- 1 tablespoon lemon juice
Instructions
- Make the crust. Combine graham cracker crumbs, melted butter, and granulated sugar in a bowl and mix until the crumbs are evenly moistened. Press the mixture firmly into the bottom of a 9-inch springform pan. Refrigerate while you prepare the filling.
- Whip the cream. Using a hand mixer or stand mixer fitted with the whisk attachment, beat the cold heavy whipping cream on medium-high speed until stiff peaks form. Set aside in the refrigerator.
- Make the filling. In a large bowl, beat the softened cream cheese with the powdered sugar and vanilla extract until smooth and fluffy, about 2–3 minutes. Gently fold in the whipped cream in two additions until fully incorporated and no streaks remain.
- Fill and smooth. Spread the cream cheese filling evenly over the chilled crust, smoothing the top with a spatula. Tap the pan lightly on the counter to release any air bubbles.
- Prepare the strawberry topping. Warm the strawberry jam with the lemon juice in a small saucepan over low heat, stirring until loose. Let cool slightly, then toss the sliced strawberries in the glaze until coated.
- Top and chill. Arrange the glazed strawberries over the top of the cheesecake filling. Cover loosely with plastic wrap and refrigerate for at least 4 hours, or overnight, until fully set.
- Serve. Run a thin knife around the edge of the springform pan before releasing the sides. Slice with a sharp knife wiped clean between cuts. Serve cold.
